Pistachio Wreath Cookies - festive Linzer cookies decorated to look like a Christmas wreath! | ChezCateyLou.com

One of my favorite things about the Christmas season is cookie baking. And although it is hard to top eating cookies, I absolutely love giving my cookies away as gifts. Nothing beats a homemade gift. I especially love giving away festive cookies that you might only make this time of year, and my Pistachio Wreath Cookies couldn’t be more seasonal – the red jam, the green pistachios, the wreath shape – these are basically Christmas in cookie form!

The dark chocolate and pistachios in these Pistachio Dark Chocolate Chunk Cookies take classic chocolate chip cookies to a new level!

Pistachio Dark Chocolate Chunk Cookies | ChezCateyLou.com

These cookies. They are really going to be the end of me. I have been trying to eat healthy since we got back from our trip. Because as much as I want to believe that gelato three times a day is normal, I know it isn’t. But then I made these cookies, and I can’t stop eating them. Do other people eat three cookies in one sitting?? Let’s go with yes, because these Pistachio Dark Chocolate Chunk Cookies are just too good to only have one. They are salty and sweet, soft but still chewy, and just bursting with dark chocolate – cookie perfection….

Easy Healthy Snack with Pistachios

Pair Skinny Nut™In-Shell Pistachios with Greek yogurt, blackberries, and green tea for a healthy and filling snack that is absolutely delicious!
Easy Healthy Snacks with Pistachios | ChezCateyLou.com

If you’ve spent any amount of time with me, you know I love my snacks! I seriously can’t go two hours without snacking on something. But when you snack as much as I do, the key is to keep the snacks healthy and  nutritionally balanced. That’s why one of my favorite snacks to reach for are pistachios! They are a great way to get a salty, crunchy fix while sticking with a healthy diet.

Plus, pistachios pair so well with other foods to create perfect snacks or mini-meals. One of my favorite pairings is pistachios with Greek yogurt, blackberries, and green tea to drink. This is literally the perfect snack –  protein from the yogurt, a little healthy fat (plus protein and fiber) from the pistachios, vitamins and fiber from the berries, and antioxidants from the green tea. Talk about a power snack! And filling too. I add a small drizzle of honey too since I like things sweet!

Scroll to the bottom of the post for a chance to win a year’s supply of pistachios!

Farro Salad

Arugula, cherry tomatoes, and fresh herbs are mixed with farro and tossed in a lemon vinaigrette. Shaved parmesan and roasted pistachios finish off this amazing farro salad!

Farro Salad | chezcateylou.com
Do you ever have an amazing dish at a restaurant that you wish you could recreate at home? I had the most incredible farro salad at one of our favorite restaurants in NYC, Charlie Bird.  I know it doesn’t sound that exciting – I mean it is salad after all.  But I promise you, this salad is memorable.  And when I got home from dinner and googled it, I found a  recipe in the New York Times for the farro salad! Lucky me!

Sidenote – Charlie Bird is delicious.  If you live here and haven’t tried it yet, you really should!  Their chicken is outstanding!   Also when we were eating there once with TheBetterHalf’s parents, we saw Jerry Seinfeld and his family.   One of our best celeb sightings!

Minetta Tavern – Friday Dinner Series

Minetta Tavern in New York City is a great spot to have a celebratory dinner, sit for a drink at the bar, or grab one of the best burgers in the city.

Minetta Tavern NYC | chezcateylou.com

Another Friday, another look at one of our favorite restaurants in New York.   Minetta Tavern is located in Greenwich Village, a few blocks south of Washington Square.  The restaurant dates back to the 1930s but it recently underwent a facelift when it was taken over by restauranteur Keith McNally.  It maintains a good deal of old school charm –  dim lighting, red leather booths, and a classic cocktail bar – and has a menu full of updated takes on traditional dishes.  Minetta Tavern is perhaps most famous for their signature burger (and for good reason), but there’s plenty more to this restaurant….
