Anytime I see Churros on a menu or pass a churro store, I get overly excited and yell “CHURROS!”. It is a totally weird behavior, but I can’t help myself. I love churros and I also love the word! My churro obsession is kind of strange though because I actually don’t eat churros very often, and had never even tried them until I moved to NYC! I still remember my first real churro – it was from the Doughnut Plant! They don’t make churros anymore, which is a shame, because it was memorably good.

In honor of Cinco de Mayo, I wanted to make a breakfast based off of churros – Churro Donut Holes, and just to make them even more outrageous I stuffed them with Dulce de Leche!  All in the name of Cinco de Mayo – what a great holiday.

I love baked goods (no surprise there). Every recipe I post, I truly love – otherwise, I wouldn’t share them with you. But I definitely play favorites. And these Lemon Brownies are one of the best things I have ever made. I can’t believe I am saying that about a recipe that does not include chocolate or peanut butter, but it is true. I love, love LOVE these lemon brownies. I literally could not stop eating them. I never considered myself a lemon dessert person, but I guess I am!! Today is National Grilled Cheese Day! This is a holiday I did not know existed until I started food blogging. How did I live my life before without celebrating these food holidays? I’m not sure, but I’m making up for lost time now by bringing you my version of the Ultimate Grilled Cheese….with tomato and bacon on brioche bread, made with two different types of Kerrygold cheeses!

My favorite type of grilled cheese has always been with tomato and bacon. There is something about that combo that is just so amazing. And the best bread for this sandwich is a nice buttery brioche. It really takes it to the next level!

I think I might have spoiled TheBetterHalf with all of the baking I do. Let me explain…we almost always have something for him to bring to work for breakfast. I package up muffins and breads and donuts in packs of two and pop them in the freezer so that he can grab one each morning on his way out the door. However I haven’t been baking as much recently and was out of town last weekend, so our frozen baked good reserves are totally depleted! He was actually complaining (jokingly, of course) that he had nothing to bring for breakfast!! Spoiled. So spoiled. I kindly reminded him that there are markets / bodegas / coffee shops on nearly every corner in NYC and that they all have a lovely selection of breakfast items. But it did lead me to make some muffins this past weekend to keep him happy – Orange Chocolate Chip Yogurt Muffins! And I’m really not complaining – I love having someone enjoy my baked goods! …
