Buffalo Chicken Cheeseburgers

These buffalo chicken cheeseburgers are a mix between a buffalo chicken sandwich and a juicy cheeseburger! If you are a buffalo chicken fan, you are going to love these burgers!

Obsessed is the only word to describe our feelings towards these Buffalo Chicken Cheeseburgers – we are absolutely obsessed with them. Do you ever have a recipe that you make that you are just SO pleased with? That was these burgers for me. I had never made a chicken burger before, so I was kind of nervous. But I had a vision in my head of what these could taste like and I figured I had to give it a shot. And they totally fulfilled my vision! These burgers are like a buffalo chicken sandwich meets a juicy cheeseburger – plus I made them in slider size, which is my favorite way to eat a burger! In fact, as soon as I finish writing this, I’m going out to buy more ground chicken so we can have these for dinner again tomorrow – that’s how much we love them!

My pictures do not do these Buffalo Chicken Cheeseburgers justice. I couldn’t figure out how to make these lil burgers look pretty. But I still had to share this recipe with you, pretty or not, because they are incredible. There are two main components to the buffalo chicken cheeseburgers – the burger patty, and the sauce.

The patty:
One of my primary concerns with making a chicken burger is that I didn’t want it to be dry. Nothing is worse than a dry burger! So I used ground chicken thigh meat instead of ground chicken breast – a little extra fat helps to keep things moist. And, I added some sautéed onion and celery to the mix. Not only do the veggies keep the burgers nice and moist, but they also add a really nice flavor and texture. The other reason this burger patty is so delicious is that I put small cubes of diced cheese in the actual burger! The cheese gets all melty and makes the burger so flavorful! I got this idea from a spot that we just love in Naples, Florida – they have an awesome jalapeño burger that has pepperjack cheese right in the patty.

The sauce:
The sauce couldn’t be more simple, or more delicious. It is just Kerrygold cheese wedges mixed with Frank’s hot sauce. I want to spread this mixture on literally everything – it is SO good.

I made my buffalo chicken cheeseburgers in slider size, because I like a small burger – but you could make it any size you want!

Buffalo Chicken Cheeseburgers

Buffalo Chicken Cheeseburgers

These buffalo chicken cheeseburgers are a mix between a buffalo chicken sandwich and a juicy cheeseburger! If you are a buffalo chicken fan, you are going to love these burgers!

Ingredients

  • 2 Tablespoons butter
  • 1 small onion, diced
  • 2 stalks celery, diced
  • 1 clove garlic, minced
  • 1 lb ground chicken thigh
  • 3 Tablespoons panko bread crumbs
  • 3 Tablespoons hot sauce (like Frank's)
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 oz diced cheese (like Kerrygold Skellig)
  • For the Sauce
  • 5 wedges Kerrygold Dubliner Spreadable Cheese
  • 3 Tablespoons hot sauce (like Frank's)

Instructions

  1. In a small skillet over medium heat, melt the butter. Add the onion and celery and saute for 5 minutes, stirring occasionally. Add garlic and cook for another minute, stirring frequently. Transfer onion mixture to a bowl and set aside to cool.
  2. In a large bowl, add the chicken, panko, 3 T hot sauce, salt, pepper, and onion mixture. Use hands to mix until combined. Add the diced cheese and mix in. Form the burger into patties, just slightly larger than the size of your buns. Slightly indent each burger in the center using your thumb.
  3. Heat a large nonstick skillet over medium heat for 5 minutes. Add 2 teaspoons vegetable oil to the pan and heat for one minute. Add the patties to the pan. Cook until golden brown, about 5 minutes. Then flip and cook on the other side until burger is cooked through (165 degrees F)
  4. For the Sauce
  5. Meanwhile, make the sauce. Mix the cheese wedges with the hot sauce until smooth.
  6. Lightly toast the buns on an ungreased skillet over medium heat. Spread each bun top with the hot sauce cheese mixture. Place a burger on the bun. Enjoy!
