St. Patrick’s Day is right around the corner! Are you ready with your Guinness / Bailey’s / Jameson / Corned Beef / Cabbage recipes? Ok maybe not all of those things together, that might be gross.  If you are still deciding what to make, I have a great Guinness recipe for you…Double Chocolate Guinness Cookies! This is my first cookie recipe using beer, and I am a big fan. Guinness cookies are definitely going to be making an appearance more regularly in my kitchen, especially around St. Patty’s Day!

The first time I made a recipe combining Guinness and chocolate was last year when I made these donuts, and I have been hooked ever since. The flavor in the stout works so well with chocolate – it actually makes baked goods taste more chocolatey! The beer in these Guinness cookies is reduced with brown sugar to make a syrup before it is added to the dough. The syrup by itself is not very tasty – so you if you sample it, do not be alarmed. But mixed into the dough, it adds a nice richness and depth of flavor.

These cookies are slightly crispy around the edges, and super soft in the middle. And just look at all that melty chocolate:

Mmmm, I can’t resist a warm cookie like that!

If you want to make these festive for St. Patrick’s Day, you can roll the dough ball in sprinkles before baking them. The sprinkles are totally optional though – the Guinness cookies taste great on their own.

Double Chocolate Guinness Cookies

Double Chocolate Guinness Cookies

These Double Chocolate Guinness Cookies are the perfect treat for St. Patrick's Day or any time of year. Guinness is a perfect complement to chocolate!

Ingredients

    For the Guinness Syrup
  • 1 (12-ounce) bottles of Guinness
  • 1/3 cup packed light brown sugar
  • For the Cookie Dough
  • 2 3/4 cup unbleached all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon espresso powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup (8 ounces) unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 extra large eggs
  • 1 extra large egg yolk
  • 2 teaspoons vanilla extract
  • 2 1/2 cups chocolate chips

Instructions

    For the Guinness Syrup
  1. In a medium saucepan over medium heat, stir together the Guinness and the brown sugar and cook for 15 - 20 minutes, stirring occasionally, until the mixture measures 1/3 cup. Set aside to cool slightly.
  2. For the Cookie Dough
  3. In a medium bowl, whisk together the flour, cocoa, espresso powder, baking powder, baking soda, and salt; set aside.
  4. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, sugar, and light brown sugar until light and fluffy, about 3 minutes. Add the eggs and yolk, one at a time, and mix until combined, scraping down the sides of the bowl as needed. Stir in the vanilla. With the mixer on low, gradually add the cooled beer syrup, mixing until combined. Slowly add the dry mixture and mix until combined. Stir in the chocolate chips.
  5. Cover the bowl with plastic wrap and refrigerate overnight, or for at least 3 hours.
  6. When ready to bake, preheat the oven to 325° F. Line a large baking sheet with parchment paper.
  7. Scoop the cookie dough into 2 tablespoon mound and space 3 inches apart on the baking sheet. Bake the cookies until the edges are set, about 13-15 minutes. Allow the cookies to cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely. Repeat with remaining dough.

    My sweetheart is definitely going to love these cookies! Any excuse to eat/drink Guinness is his idea of paradise! I make a Guinness Chocolate Cake for his birthday every year, so I just know he is going to gobble these up 🙂
    And sprinkles in our house are definitely not optional!

    I saw this recipe when you posted it and kept forgetting to come back to it… So glad I did! But now my mouth is watering, haha. I don’t love drinking Guinness, but I do love using it in baking! I don’t have any recipes on my blog that feature it, but I suppose I should start! It’s such a wonderful compliment to chocolate!
