Today we are celebrating….it is Chez CateyLou’s 3rd birthday!!!! I can’t believe I have had this blog for 3 years! This is where it all started, with lots of help from TheBetterHalf!  It is so much fun to look at how much my blog has grown and changed since I began.  I have learned so much the past 3 years, met incredible people, and done amazing things – all thanks to my little corner of the internet.

We have a bit of a theme around here when it comes to celebrating blog birthdays…and it involves chocolate and peanut butter. 1st birthday. 2nd birthday. So I had to continue the tradition for the 3rd birthday, with these Chocolate Peanut Butter Heart Cakes. It wouldn’t be Christmas around here without some kind of Christmas Crack recipe! It has become my annual tradition on Chez CateyLou! It started with the original Christmas Crack, which might I add has been my most popular recipe this month, and then last year I made a Graham Cracker Toffee version. And this year, I have really outdone myself with this Peanut Butter Christmas Crack.

In case you have never heard of this delicious treat, Christmas Crack is an easy chocolate toffee that is made with saltine crackers. It is called “crack” because it is absolutely addicting – anytime I make it, TheBetterHalf and I can’t stop eating it. Truly addicting – and that is why I only make it once a year!  My peanut butter version takes addicting to a new level – if you are a peanut butter lover, you HAVE to try this recipe!

Parmesan Cheese Toast with Brown Sugar Bacon is quite a long name for a recipe…I should have just called it The Best Appetizer Ever. Because honestly – this really is the BEST appetizer ever. I mean first of all – brown sugar bacon, aka candied bacon, aka sugared bacon – that alone could be considered one of the best appetizers ever. Sweet and salty and crispy – I could eat an entire plate full of just that! But what makes this THE best is the parmesan cheese toast points. The combo of the nutty salty parmesan broiled on the toast and then topped with the bacon is nothing short of life-changing. Seriously.

Growing up, this appetizer was always served at family parties at our country club. Any get together HAD to include this hors d’oeuvres. And they were always the first to go. In fact at our wedding, we ordered double the amount of these because we knew that everyone would go crazy for them. And yet even after having these for years, I had never actually tried to make them myself. Well…now I know how to make them, and, I know how easy it is to make them – this is going to be dangerous. My brother has already requested that I make a giant platter for Christmas Eve!
