Peanut butter ice cream is sandwiched between gooey brownies to make these Brownie Ice Cream sandwiches – they are a decadent and delicious summer treat!

What’s your favorite ice cream flavor? I have a hard time choosing one – you should see me in an ice cream shop. I sample as many as they will let me, and then still can’t make up my mind! But chocolate peanut butter anything is at the top of the list, and it is TheBetterHalf’s absolute favorite, so that is what I usually end up getting. And I have never had a better peanut butter chocolate ice cream flavor than the Double Peanut Butter Chip from McConnell’s. I take my ice cream very seriously so you can trust me when I say it is the absolute best. Then, when you sandwich it between brownies, and add some mini peanut butter cups to the mix, well the result is one of the best summer treats ever – Peanut Butter Brownie Ice Cream Sandwiches.

I met the McConnell’s Ice Cream team at the Fancy Food Show here in NYC in June. I was first drawn to their booth by the samples of ice cream they were giving out (I could try every single flavor, and they didn’t roll their eyes at me like at ice cream shops!!) and then I ended up staying for a long time talking to them all about ice cream. These people are passionate about ice cream, and it was so much fun to learn more about their company and their history. Although they are a Santa Barbara company, their ice cream is now sold in various stores across the east coast, so I can get my fix right here in NYC.

The Double Peanut Butter Chip flavor is absolutely perfect for my peanut butter brownie ice cream sandwiches. The ice cream is a peanut butter ice cream base with a pb swirl and chunks of dark chocolate. I sandwich all of that peanut butter ice cream deliciousness between gooey brownies – but to make these brownie ice cream sandwiches even more outrageous, I add some mini peanut butter cups to the ice cream. Because in my opinion, there is no such thing as too much peanut butter! This is such a fun and easy treat to make – and it is even easier if you use a box brownie mix! You definitely could make your brownies from scratch, but even a dedicated food blogger like me likes to take shortcuts sometimes!

Peanut Butter Brownie Ice Cream Sandwiches & a Giveaway

Peanut butter ice cream is sandwiched between gooey brownies to make these Brownie Ice Cream sandwiches - they are a decadent and delicious summer treat!

Ingredients

  • Your Favorite Brownie Recipe (that is meant to be cooked in an 8inch square pan) or a box of brownie mix.
  • 1 pint McConnell's Double Peanut Butter Chip Ice Cream
  • 20 mini peanut butter cups

Instructions

  1. Grease two 8-inch square pans and line with parchment paper.
  2. Prepare your favorite brownie recipe OR a box of brownie mix according to the instructions, and pour the batter evenly between two 8-inch square pans. Bake the brownies for about half the time called for in the recipe/on the box - mine took 14 minutes.
  3. Allow the brownies to cool completely.
  4. Let the ice cream sit at room temperature until soft. Spread the ice cream evenly over one pan of brownies. Evenly dot with mini peanut butter cups. Place the second pan of brownies on top of the ice cream, and press gently and evenly so that everything sticks together. Freeze the brownie ice cream sandwiches overnight. Cut into squares and enjoy.

    Mmmm, I love brownie ice cream sandwiches because they’re so soft and everything just melts in your mouth. My favourite ice cream flavour is mint chocolate chip but I’ve been experimenting lately and chocolate and peanut butter is definitely up there!

    Oh, boy, this is killing me! Peanut butter anything is amazing! One of my favourite ice cream flavours is Moose Tracks, which contains little peanut butter cups 🙂
