These cookies. They are really going to be the end of me. I have been trying to eat healthy since we got back from our trip. Because as much as I want to believe that gelato three times a day is normal, I know it isn’t. But then I made these cookies, and I can’t stop eating them. Do other people eat three cookies in one sitting?? Let’s go with yes, because these Pistachio Dark Chocolate Chunk Cookies are just too good to only have one. They are salty and sweet, soft but still chewy, and just bursting with dark chocolate – cookie perfection.

I had a friend in town this past weekend, so she helped me taste test these pistachio dark chocolate chunk cookies! And sat through my food photo shoot….thanks Mere! But they passed her test, phew. It is always so fun to have people around to eat my baked goods!

Pistachios are one of my favorite nuts. I love the flavor, the color, the saltiness. But for some reason, I’ve never baked with them! In fact, it is rare that you find pistachios in cookies. Walnuts and pecans seem to get all the cookie love. Well not anymore for me – I am all about the pistachios! Especially in these chocolate chunk cookies.

Pistachios and dark chocolate are a match made in heaven! And there is no shortage of either in this cookie. I used two dark chocolate bars and cut it into chunks, which resulted in big pools of melty dark chocolate – so good! Just make sure you grab a napkin before you eat one!

Pistachio Dark Chocolate Chunk Cookies

Pistachio Dark Chocolate Chunk Cookies

The dark chocolate and pistachios in these Pistachio Dark Chocolate Chunk Cookies take classic chocolate chip cookies to a new level!

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 and 1/2 sticks unsalted butter, softened
  • 1/2 cup sugar
  • 3/4 cup light brown sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla
  • 1 1/2 cups dark chocolate chunks
  • 3/4 cup shelled pistachios
  • Flaky sea salt for finishing, if desired.

Instructions

  1. Preheat oven to 350 degress F.
  2. In a medium bowl, whisk together flour, baking soda, and salt
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream together butter, sugar, and brown sugar on medium speed for 2 minutes, until light and fluffy. Add the egg, then the yolk, and mix until fully incorporated. Mix in the vanilla.
  4. Add the flour mixture to the wet ingredients and mix on low speed until just combined. Add the chocolate and nuts and mix to combine.
  5. Scoop the cookie dough onto the sheet, using about 2.5 tablespoons of dough for each cookie and spacing them about 3 inches apart. If desired, sprinkle each dough ball with flaky sea salt. Cook for 13-15 min, until just slightly golden brown on the edges. Allow the cookies to cool on the sheet for a few minutes, then transfer to a wire rack to cool completely.

    Cate,
    The only thing I hate about using pistachios in cooking is shelling them. In advance of garlic scape season (because I love garlic scape & pistachio pesto more than I love Robert Barker my rescue Basset hound) I picked up a Costco bag of shelled pistachios.
    No reason not to make these yummy-looking cookies. Thanks!

    Oh yes Cate! This is one of my favourite combinations! I love keeping pistachios and dark chocolate in my fridge for a little sweet treat when I need it, and I have been fantasising about combining it into cookies too! Now here you come along with the perfect chewy, salty, sweet and chocolaty recipe! I can’t wait to make them!

    CATE, those chunks are EPIC!! I loveeee them. And I must agree with you– pistachios need some more cookie love. I bet they’re real happy they got to hang out with super melty chunks of chocolate in your cookies!

    Amazing, girl! These cookies look like heaven! I could (and would) eat three in one sitting too, so don’t feel bad. And when in Europe, gelato three times a day is totally acceptable. It isn’t *your* fault that you are forced to eat as much as you can there, because nothing compares back home. Just sayin’. So excited to see you this weekend!!!!!
