Ricotta Tomato Toast is a simple but delicious appetizer that is absolutely perfect for summer entertaining!
One of my favorite parts of traveling is the inspiration that it gives me in the kitchen once I’m back home. I love recreating dishes that we tried on our trips, or putting my own unique spin on things. Our recent trip to Italy inspired this delicious Ricotta Tomato Toast. We had an amazing bruschetta in Portofino and I couldn’t wait to make my own version. A tomato toast is the perfect summer party appetizer. I think summer appetizers should be easy to prepare – but still beautiful and delicious. This ricotta tomato toast checks all the boxes. And it pairs perfectly with a wine from The Seeker – because you can’t have summer entertaining without a nice glass of wine!
I am obsessed with Heirloom tomatoes right now. I actually don’t even know if they taste better than regular red tomatoes, but something about the color of them makes them so much fun to eat! And, so much fun to cook with. They instantly dress up any dish you make, and they are the star of my tomato toast. One bite, and you will be transported right to Italy. This tomato toast is so simple to make, it is hardly a real recipe! Sometimes, those are the best kinds. All you need to do is slice up a great loaf of bread – I like my no-knead bread. Drizzle it with some olive oil and toast it until it is nice and golden brown. Then, spread with a thin layer of ricotta, and layer on some sliced heirloom tomatoes. Finish the toast off with salt, pepper, and some fresh basil and you have a delicious and easy summer appetizer ready to go.

Ingredients
- 1/2 loaf hearty bread, like this
- 1/4 cup olive oil
- 1/2 cup ricotta cheese
- 3 heirloom tomatoes, sliced
- salt and pepper
- 1/4 cup fresh basil
Instructions
- Preheat oven to 375 degreesF.
- Cut the bread into thick slices and place on a baking sheet. Drizzle the bread with the olive oil, then bake for 10 - 15 minutes, until light golden brown.
- Spread each piece of toast with a thin layer of ricotta cheese. Place slices of tomato on top of the ricotta. Sprinkle with salt and pepper, then garnish with fresh basil and serve.

Tomato toast is all the rage right now, and I feel like I need to try it! We are smothered in tomatoes at the moment, but we sure don’t mind just slicing one up and throwing it on a plate with salt & pepper! YUM. We should maybe try out this toast business next time we get to slicing!
