How is it already August?! It is hard to believe, but summer is almost over. I feel like I haven’t even made a dent in my summer to-make list. There are so many tomato and corn and berry recipes that I want to make before it turns into pumpkin and apple everything – I need to get cooking!!

Buffalo Chicken Cheeseburgers

These buffalo chicken cheeseburgers are a mix between a buffalo chicken sandwich and a juicy cheeseburger! If you are a buffalo chicken fan, you are going to love these burgers!

Obsessed is the only word to describe our feelings towards these Buffalo Chicken Cheeseburgers – we are absolutely obsessed with them. Do you ever have a recipe that you make that you are just SO pleased with? That was these burgers for me. I had never made a chicken burger before, so I was kind of nervous. But I had a vision in my head of what these could taste like and I figured I had to give it a shot. And they totally fulfilled my vision! These burgers are like a buffalo chicken sandwich meets a juicy cheeseburger – plus I made them in slider size, which is my favorite way to eat a burger! In fact, as soon as I finish writing this, I’m going out to buy more ground chicken so we can have these for dinner again tomorrow – that’s how much we love them!

Happy Friday! What are you up to this weekend? We are just hanging out in NYC and I couldn’t be happier! I feel like we haven’t had a relaxing weekend in the city all summer, so I am excited to just chill! And bake. Lots of baking on the agenda! And if you are looking for something delicious and summery to bake this weekend, might I suggest this Mixed Berry Galette? It is one of my absolute favorite summer desserts.

You might remember this Rustic Strawberry Peach Tart from last year. It was one of the best things I made all summer long! My Mixed Berry Galette is basically the exact same thing, except with a different filling! I decided to change the name to make it sound fancy – but don’t let the fancy name fool you. The dark chocolate and pistachios in these Pistachio Dark Chocolate Chunk Cookies take classic chocolate chip cookies to a new level!

These cookies. They are really going to be the end of me. I have been trying to eat healthy since we got back from our trip. Because as much as I want to believe that gelato three times a day is normal, I know it isn’t. But then I made these cookies, and I can’t stop eating them. Do other people eat three cookies in one sitting?? Let’s go with yes, because these Pistachio Dark Chocolate Chunk Cookies are just too good to only have one. They are salty and sweet, soft but still chewy, and just bursting with dark chocolate – cookie perfection….
