Happy St. Patrick’s Day! Is everyone wearing their green today? I have on a green cardigan 🙂 And I have a delicious Irish recipe to share with you – Cheesy Irish Soda Bread! I took a traditional Irish Soda Bread recipe and stuffed it full of Kerrygold Dubliner cheese, and  then topped it with some cheddar because you can never have too much cheese!  This bread is so easy to make and tastes absolutely amazing.  The smell in your kitchen while this is baking is unreal!
TheBetterHalf and I met our freshman year at Notre Dame. Needless to say, St. Patrick’s Day is a huge holiday for the Fighting Irish students! Unfortunately, it would fall over spring break sometimes – but our freshman year it didn’t and I still remember how much fun we had that day. There may or may not have been Baileys in everyone’s coffee during class that morning. Cheesy story for my Cheesy Irish Soda Bread (so bad, I know)…we first said I love you 11 years ago today! So St. Patrick’s Day really brings back great memories for me!
But enough about that – let’s talk about Cheesy Irish Soda Bread! And Cheese.

The March Challenge was “Bring the Taste of Ireland to Your Kitchen” – so perfect for St. Patrick’s Day! I used Kerrygold Dubliner cheese to make my Cheesy Irish Soda Bread.
If you are at all afraid of baking bread, Irish Soda Bread is the perfect solution for you. It is so easy to make – no yeast required! Just mix everything together, form it into a loaf, and bake! Simple and delicious. This version is bursting with cheese. The Kerrygold Dubliner adds the most amazing flavor – slightly sweet, slightly nutty. If you haven’t tried this cheese I highly recommend it! Â And then I finished the bread with a little cheddar for a nice orange color.

Dubliner and cheddar cheeses are mixed into a traditional Irish soda bread recipe to make Cheesy Irish Soda Bread. So simple to make and tastes amazing!
Ingredients
- 2 1/2 cups All-Purpose Flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons cold unsalted butter, cut into pats
- 7 ounces Kerrygold Dubliner Cheese, shredded
- 1 cup buttermilk
- 1 large egg, lightly beaten
- 2 ounces cheddar cheese
Instructions
- Preheat the oven to 375°F. Lightly grease a cast iron skillet, or line a baking sheet with parchment paper.
- In a large bowl, add the flour, baking powder, baking soda, and salt and whisk to combine
- Add the butter, and use your fingers or a pastry cutter to mix it into the flour, until the mixture is crumbly. Stir in the Dubliner cheese. Add the buttermilk and egg and stir until everything is combined - you might need to use your hands to do this. Form the dough into a round loaf, and place in the skillet or on the baking sheet. Use a sharp knife to cut a cross in the top of the bread. Sprinkle the cheddar evenly on top of the bread.
- Bake the bread for 35 - 40 minutes, until it is golden brown and the internal temperature is about 200 degrees F. Allow the bread to cool in the pan for a few minutes, then transfer to a wire rack to cool a bit before cutting.
