These are not just any Mini Funfetti Cupcakes. These cupcakes are to celebrate a very special birthday…my good friend Katie’s blog Twin Stripe is turning 3 this week and I am so excited to be celebrating with her!
When Katie invited me to join in Twin Stripe’s birthday celebration, I knew I had to make something with sprinkles, because nothing says birthday quite like sprinkles! I decided Mini Funfetti Cupcakes would be the perfect party treat. Cute, easy to eat, festive, and delicious!

Katie and I actually went to high school together in good ‘ol St. Louis, MO! We lost touch in college, but re-kindled our friendship through our blogs which I think is just awesome. Katie also created my logo for me – she is truly so talented!
She sent me the cutest box of birthday goodies to help me create my post. I actually borrowed some of them for Chez CateyLou’s birthday post!
These are a pretty standard funfetti cupcake recipe, just made in a mini version! I made half the cupcakes with cupcake liners and half without – I recommend using a cupcake liner. The ones without just looked too muffin-y to me!
The cupcakes are topped with a delicious vanilla buttercream frosting, which is my favorite icing for funfetti cake. I started icing my cupcakes by piping the icing to make it look pretty, but quickly got tired of doing it that way – I do not have much patience when it comes to icing! I finished off the cupcakes with just a simple icing job, which I personally think looks just as good as the fancy piping, especially if you are topping with sprinkles! It is how they do it at Magnolia Bakery after all! Plus I like more cake than icing on my cupcakes – piping the icing results in more frosting on the cupcake. If you want to pipe icing on all the mini cupcakes, I suggest doubling the recipe.

Ingredients
- 1/2 cup flour
- 1 cup cake flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 6 Tablespoons unsalted butter, at room temperature
- 3/4 cup sugar
- 2 large eggs
- 1 1/2 teaspoon vanilla
- 1/2 cup buttermilk
- 1/3 cup sprinkles (Jimmies, not Non Pareils)
- 1 stick of unsalted butter, at room temperature
- 1-2 cups powdered sugar
- 1 Tablespoon milk
- 1 teaspoon vanilla
- 1/4 teaspoon salt
Instructions
- Preheat oven to 325 degrees F. Line 2 mini muffin tins with mini cupcake liners (makes about 36)
- In a medium bowl, whisk together flour, cake flour, baking powder, baking soda and salt until well combined.
- In a separate bowl (or the bowl of a stand mixer fitted with the paddle attachment), beat together butter and sugar until light and fluffy. Add the eggs, one at a time, and mix until very well incorporated. Mix in the vanilla and buttermilk. The mixture may look curdled - that is ok!
- Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the sprinkles.
- Spoon the batter into the muffin tin, filling each cavity only 2/3 full.
- Bake for 12-15 minutes. Remove from oven and allow to cool in the pan for a few minutes, then turn out onto a wire rack to cool completely.
- Beat the butter for a minute until light and fluffy. Add 1 cup of powdered sugar, milk, vanilla and salt and beat until very well combined. Continue beating in powdered sugar, until desired consistency and flavor is reached.
- Ice the cooled mini cupcakes using an offset spatula, and decorate with sprinkles. If you want to pipe on lots of icing, double the icing recipe.
