Happy Friday! What are you up to this weekend? We are just hanging out in NYC and I couldn’t be happier! I feel like we haven’t had a relaxing weekend in the city all summer, so I am excited to just chill! And bake. Lots of baking on the agenda! And if you are looking for something delicious and summery to bake this weekend, might I suggest this Mixed Berry Galette? It is one of my absolute favorite summer desserts.

You might remember this Rustic Strawberry Peach Tart from last year. It was one of the best things I made all summer long! My Mixed Berry Galette is basically the exact same thing, except with a different filling! I decided to change the name to make it sound fancy – but don’t let the fancy name fool you. We are throwing a party today! It is a BABY SHOWER for my good friend Zainab aka Blahnik Baker. Zainab was one of my first blog friends, and she is absolutely amazing. In addition to being an incredible baker, she is such a great person – so supportive, kind and fun! She is going to be the most amazing mom, and I’m so happy to be celebrating her today!

She is a coconut fanatic (see here and here) so we are throwing a tropical themed party for her. I’m bringing Mango Coconut Donuts to the party! Donuts are kind of my thing, so I knew I had to make some coconut donuts for this coconut themed baby shower!

Mango Strawberry Smoothie

This Mango Strawberry Smoothie is my go-to breakfast this summer. Mango and yogurt give it a great creamy texture and the flavor combo is perfect!

Do you ever get obsessed with a certain food / recipe? I go through phases where I eat the same thing literally every day until I’m sick of it. For awhile, it was these pancakes (one of my favorite solo dinner meals!) And right now, it is this Mango Strawberry Smoothie. I have found my perfect smoothie combo! Frozen mangos, fresh strawberries, light vanilla yogurt, and pineapple-coconut water. Love love love it. The flavor is amazing, and it is so refreshing. I’m absolutely obsessed!

Pineapple Upside-Down Cake

A delicious and classic recipe for Pineapple Upside-Down Cake, made with fresh pineapple. This caramelized fruit is a perfect complement to moist yellow cake.

With all the baking that I do, you would think that I have tried every classic recipe at least one time. Nope. Not even close. There are just SO many amazing recipes out there. My to-bake list is never-ending. However I am trying to knock out some of the most classic recipes, and Pineapple Upside-Down Cake is on that list! I know it isn’t that popular anymore, but it is such a well-known old fashioned recipe that I just had to try my hand at making one. Plus, I’m not sure how this happened, but I had never actually eaten a piece of pineapple upside-down cake until I made this one! Verdict: I am a fan!

Orange Yogurt Cake

Orange Yogurt Cake (aka orange yogurt bread) is so moist thanks to a cup of Greek yogurt and a delicious orange syrup that is poured over the warm cake.

We have been absolutely obsessed with this Orange Yogurt Cake for the past few weeks. I seriously can’t stop making (and eating) it. The texture is just so amazing – super moist from a full cup of Greek yogurt. And then to make it even better, an orange simple syrup is poured over the warm cake. So good! I made a lime version of this the other day, and I can’t wait to try a lemon version too. This is definitely my current go-to breakfast / snack / dessert recipe!
