With all the baking that I do, you would think that I have tried every classic recipe at least one time. Nope. Not even close. There are just SO many amazing recipes out there. My to-bake list is never-ending. However I am trying to knock out some of the most classic recipes, and Pineapple Upside-Down Cake is on that list! I know it isn’t that popular anymore, but it is such a well-known old fashioned recipe that I just had to try my hand at making one. Plus, I’m not sure how this happened, but I had never actually eaten a piece of pineapple upside-down cake until I made this one! Verdict: I am a fan!

Can you handle the ooey-gooeyness of these chocolate caramel oatmeal bars?? I really can’t – I want to eat that entire stack right now! And if you cheat and use store-bought caramel, these bars are so simple to make. And yes, I did cheat…I know that I’m a food blogger and should be making everything from scratch, but you can get such delicious caramel sauce in jars that I figured I would take a shortcut. And you really can’t tell a difference – these are delicious!!

There are only 5 days until Valentine‘s Day! Do you have fun plans? I’ve actually never really been that into Valentine’s Day – but I do like any excuse I can get to bake delicious and festive treats. There is just something about heart shaped sprinkles that makes any baked good taste better! Like Caramel Stuffed Red Velvet Cookies. Sure these fudgy chocolatey cookies stuffed with ooey gooey caramel and melty chocolate chips would taste amazing on their own – but the Valentine’s sprinkles just make them so darn cute!!  So I guess I liked – I am into Valentine’s Day.  🙂

Did everyone have a good Halloween? Did you dress up? I am not a big Halloween person. Costumes are sooo cute on kids but I’m not really into dressing up myself. And Halloween brings out all of the crazies in NYC, so TheBetterHalf and I just stayed in! But I am a fan of Halloween candy 🙂

Now that Halloween is over, I’m sure you have candy coming out of your ears! Well if you have a bunch of leftover Rolos and caramels then I have the perfect recipe for you! Salted Caramel Stuffed Chocolate Cookies! A rich and fudgy chocolate cookie is stuffed with a rolo and topped with chopped caramel pieces. The whole cookie is finished off with a little flaky sea salt, making these a sweet and salty lovers dream cookie!

Salted Caramel Chocolate Chip Cookie Bars

Some nights you just need a cookie.  I mean right now.  Immediately.  And that is why I am so happy that I recently discovered cookie bars.  Because on those nights that you just need a cookie right away, you didn’t think ahead to soften butter to room temperature, nor do you have time to let dough chill.  Enter the amazing cookie bar.  Specifically a chocolate chip cookie bar with salted caramel sauce swirled inside and sprinkled with sea salt.  Sounds complicated, right? It is not at all!!  Especially if you have some caramel sauce leftover from making these brownies.  Just melt some butter (no waiting for butter to soften in this recipe!) and mix it with sugar, eggs, and vanilla.  Add in the dry ingredients and chocolate chips, and you are ready to go!  There is no chilling this dough, just plop it right into the pan. Well there is one little extra step, but I promise it is worth the time because it involves caramel!  Press half the dough into the pan and then pour caramel sauce all over it.  Then you dollop the cookie dough in little scoops over the top (it looks so cute!) and lightly press it down.  Sprinkle everything with some fleur de sel, and that’s it!  In about 30 minutes, warm gooey cookie bars are ready for almost immediate consumption! Now I will say that the texture changes a lot as these sit.  The bars firm up and become like actual cookies. But there is absolutely nothing wrong with sneaking a square (or two) of the warm bars when they are still doughy and gooey! …
