This Grapefruit Tequila Cocktail with Chocolate Bitters, modeled after a drink at the popular Seattle bar Sun Liquor, is the perfect combo of sweet and tart.

It is an absolutely gorgeous day here in NYC! Sunny, 75, just a few puffy white clouds in the blue sky – perfect! It rained about every day this week, including an absolute monsoon last night, so we are ready for some sunshine. And chez CateyLou, beautiful weekend days mean rooftop cocktails! One of the perks of NYC living:) So today I have a Grapefruit Tequila Cocktail with Chocolate Bitters for you.

Yes, chocolate bitters!! Perhaps my new favorite cocktail ingredient.

We modeled this drink after one that we had at an awesome bar in Seattle (more about that trip in a post this week!), Sun Liquor.  They call the cocktail a Sinaloa.  When I saw it on the menu, I was definitely skeptical. Chocolate and grapefruit sounds like an odd pairing to me, much less in a cocktail! But the great bartender, Ted, convinced me to get it. And I can honestly say that it was the best drink I have ever had!

The hint of sweet chocolate tastes amazing with the tart grapefruit. I couldn’t wait to recreate this cocktail in my own kitchen.

But first I had to order some supplies, because this drink definitely takes a few ingredients that might not be in your standard liquor cabinet:

–Cocchi Storico Vermouth di Torino – this ingredient was brand new to us.  It is very complex and adds a nice sweetness and depth of flavor to the cocktail.
–Scrappy’s Chocolate Bitters – this is made in Seattle, using chocolate from Theo’s, a local chocolate store.  We visited the Theo’s factory and loved their chocolate!

Plus I needed to have fancy ice. Our boring old ice cubes would obviously not work for this fancy cocktail. So I ordered this fun Pink Ice Cube Tray too!

We also used a silver tequila (Patron) for a smooth flavor, and freshly squeezed grapefruit juice. It really makes all the difference in the world to use fresh-squeezed juice in cocktails.

Hope everyone is having a great weekend!  Whip up some of these Grapefruit Tequila Cocktails and then I know you will have a really great weekend!

I am so jealous that you live in NYC, Cate! It’s my most favorite place in the world and I would move there in a hear beat if I could! 🙂 But as for these drinks, they sound and look amazing! I love grapefruit flavored drinks, and adding a chocolate bitter sounds like it would be the perfect touch. Pinned!

This sounds amazing and I have a bottle of tequila just waiting for me. I’m sure this will taste just as good in my backyard on a 95 degree evening as it did on your rooftop. 🙂
