A light and refreshing Limoncello Cocktail is the perfect drink to sip on all summer long, and it couldn’t be easier to make!

It is a beautiful summer Friday, and I can’t think of a better way to celebrate than with a Limoncello Cocktail!  This is probably the simplest recipe I have ever posted on Chez CateyLou.  And that’s why it is so perfect – you only need two ingredients to make a delicious, refreshing, and pretty summer cocktail!  That’s right – with just limoncello and club soda you can have a summer party started in no time!

I fancied up my basic cocktail a bit with fresh raspberries and mint.  TheBetterHalf fancied his up with a bit of gin!  And that is the real fun of this cocktail – you can customize it to your liking.  Want it stronger?  Add a bit of gin or vodka.  Only have blueberries in the house?  Throw those in the cocktail instead of raspberries!  Out of fresh mint?  Leave it out, or try basil.  The combinations are endless, and it is really fun to get creative at the bar.

I’m going to keep this post short and sweet because I am in Kansas City visiting my friend from high school and her sweet new baby girl! I’m enjoying life in suburbia – I’ve already visited Chick-Fil-A for a large diet lemonade and unsweetened iced tea. So good!

Limoncello Cocktail

A light and refreshing Limoncello Cocktail is the perfect drink to sip on all summer long, and it couldn't be easier to make!

Ingredients

  • 1 cup Limoncello
  • 2 - 3 cups club soda
  • Ice
  • fresh raspberries (or any berry, if desired)
  • fresh mint (if desired)

Instructions

  1. Pour the Limoncello into a pitcher. Add 2 cups of club soda and gently stir to combine. Taste the mixture and add more club soda to taste. Add ice to the pitcher and stir. Pour the cocktail through a strainer into glasses. Drop a few berries into each glass, and garnish with fresh mint.

    AAHHH! Diet lemonades are BEST at CFA!!! My FAVE!!!

    So since you know my affinity for lemonades … I’m sure you can guess how much I’m going to love this limoncello cocktail! Loving the raspberries – and maybe also a splash of gin! Lol! 🙂

    I’m so glad you reminded me of these! One summer the liquor store near my apartment inexplicably put limoncello on sale for $1 a bottle, so needless to say these cocktails were all I drank all summer. Hope you had a great weekend in Kansas City!
