These flourless chocolate peanut butter cookies have a brownie-like texture. They are so soft and chewy, and are full of delicious peanut butter flavor!
Is there anything worse than a peanut butter cookie that doesn’t taste very peanut butter-y? I’m constantly disappointed by PB cookies at bakeries. Far too often, they just lack that delicious nutty flavor. Well today’s recipe solves that problem completely! These flourless chocolate peanut butter cookies are so full of flavor! Apparently taking out flour and butter is the key to having the peanut butter flavor shine. And as an added bonus, the texture is so soft and chewy, almost exactly like a brownie. Plus, they are Gluten Free!
If you haven’t noticed, I am slightly obsessed with peanut butter. I eat it practically every day, and it is always my favorite ingredient to reach for when I am baking. So these flourless chocolate peanut butter cookies are pretty much perfection for me – so full of nutty flavor!
And guess what…they only have 7 ingredients! That’s right. These could not be easier to make. You pretty much dump everything in a bowl and mix it up, then bake. That’s it. So simple! If you are a peanut butter lover, you are going to be obsessed with these cookies!

Recipe adapted from Sally's Baking Addiction
Ingredients
- 1 large egg
- 1 cup (250g) creamy peanut butter, at room temperature (I used JIF Natural)
- 1/3 cup (67g) brown sugar, lightly packed
- 1/2 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 cup (32g) cocoa powder
- 3/4 cup peanut butter chips
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat oven to 350 degrees F. Line two baking sheets with parchment paper or a silicone mat.
- Add egg to a large bowl and beat. Add peanut butter, brown sugar, and vanilla and mix until combined. Add baking soda and cocoa powder and mix until well incorporated. Stir in peanut butter chips, reserving a few for the top of the cookies.
- Scoop the dough (about 1.5 tablespoons for each cookie) onto the cookie sheets, spacing them evenly. Gently press on the cookies to slightly flatten.
- Bake the cookies for 8 - 10 minutes. The cookies will look very soft and under baked. Remove from the oven and gently press the reserved PB chips and the chocolate chips (if using) on the tops of the cookies. Let them cool on the cookie sheet for 10 minutes, then transfer to a wire rack to cool completely.
