Easter falling this early really put a damper on my Easter baking plans! Last year I made lots of fun Easter treats for you but this year I only had a chance to make one. So I figured if I was only making one, it better be good! I turned my favorite dessert (brownies!) into mini Easter Brownie Nests! These little treats are really easy to make, taste delicious, and are so cute. They are perfect to serve at an Easter party!
To make these brownie nests, I started out with brownie bites, which is just brownie batter baked in mini muffin tins. Then for the “grass” part of the nest, I used sweetened shredded coconut. I just placed a little bunch in the center of each unbaked brownie bite. When you bake the brownies, the coconut gets all browned and toasty! The brownies tend to puff up a bit in the oven while they are baking, so right when I take them out of the oven, I gently press on the centers with the handle of a wooden spoon to make a little indent. This is so that the brownie nests can hold the candy eggs!
Once the brownies are cool, place one or two candy eggs in each brownie bite. I used Cadbury mini eggs because I liked their small size, but you could use any kind of candy egg you want. In fact, I ran out of Cadbury eggs so I had to use a few Reese’s eggs too. Jellybeans would also look adorable!
Make sure to spray the mini muffin tin with nonstick cooking spray, and spray it very well. These little brownies tend to stick in the pan! I just ran a sharp knife around the edges of any of my stuck brownies, and then they popped right out.

Ingredients
- 2/3 cups cake flour
- 1/4 teaspoon table salt
- 1/2 teaspoon baking powder
- 3 ounces unsweetened chocolate, chopped fine
- 6 tablespoons unsalted butter
- 1 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup sweetened shredded coconut
- 24 mini candy eggs (or 48 if you want to put 2 eggs per nest)
Instructions
- Preheat oven to 325 degrees F. Spray a mini muffin tin with nonstick cooking spray - spray very well so they do not stick.
- In a small bowl, whisk together the flour, salt, and baking powder.
- In a medium microwave safe bowl, melt the butter and the chocolate, stirring every 15 seconds so that it does not burn. Once the chocolate mixture is melted and smooth, let it cool for a few minutes and then whisk in the sugar. Add the eggs one at a time, whisking well after each addition. Whisk in the vanilla.
- Add the dry ingredients to the wet and stir until just combined.
- Spoon the batter into the muffin tin, filling each about half full. You might have extra batter. Sprinkle the top of each brownie bite with toasted coconut in the middle of the brownie, about a teaspoon of coconut for each one. Bake for 10-12 minutes, until the coconut is slightly brown and the brownie is just cooked through. Use the handle of a wooden spoon to gently press an indent in the center of each warm brownie. Allow the brownies to cool, then place a candy egg (or two) in the center of each brownie nest.

Aaaaaadorable. I agree that Easter coming early this year really threw me off of my baking plan! Ugh. Also, those mini eggs are SO DANGEROUS. If I made these I would probably put 6 eggs per nest just so I could eat more of them. I’ll settle for looking at yours to save my skinny jeans the despair.
