It’s finally Friday! I don’t know about you, but I could use a cocktail (or two)! This refreshing pineapple mint tequila mojito will do the trick! This cocktail is delicious. The light sweetness from the mint simple syrup and the fresh pineapple complements the tequila and lime perfectly. Top it off with club soda for some bubbly action and you have a perfect cocktail! The original recipe calls for rum, but TheBetterHalf and I prefer tequila mojito. I think this would also be great with vodka. I decided to put a sugared lime rim on our cocktails because it looks so pretty – and because I am a fan of sugar if you couldn’t tell. It is so easy, just zest one or two of your limes and mix it with some sugar. Cheers! Hope you all have a great weekend.

Ingredients
- 3/4 cup sugar
- 1 cup (packed) fresh mint leaves
- 1/4 pineapple, peeled, cored, cut into 1-inch pieces (about 1 1/2 cups)
- 1/4 pineapple, peeled, cored, cut into 1-inch pieces (about 1 1/2 cups)
- 4 limes, each cut into 8 wedges
- 1/2 cup (packed) fresh mint leaves
- 2 cups tequila
- Club soda
- 1/4 cup sugar
- Zest of 1-2 limes
- Lime wedge
Instructions
- Bring sugar and 1 cup water to a boil in a small saucepan, stirring to dissolve sugar. Remove from heat, add mint, and let cool completely.
- Once the syrup is cool, place pineapple in a blender and puree until smooth. Strain mint syrup through a fine-mesh sieve into the pineapple puree and pulse to combine. Transfer to a covered container, cover, and chill.
- For each cocktail, muddle 2 pieces pineapple, 3 lime wedges, and 1 Tbsp mint leaves in a cocktail shaker until lightly crushed. Add 2 ounces tequila and 2 ounces pineapple-mint puree to cocktail shaker, fill with ice, cover, and shake until outside of shaker is frosty, about 30 seconds. Strain and pour drink into a glass and top off with club soda to taste. Garnish with a lime wedge and a mint sprig.
- Mix together 1/4 cup of sugar with the zest of 1-2 limes. Rub a lime wedge around the rim of an empty glass and dip it in the sugar mixture. Fill the rimmed glass with the cocktail.
