Stuffed Mushrooms are such a classic party food. They are the perfect passed appetizer – they look pretty on a platter, can be eaten in one bite, and are absolutely delicious! So I thought why wait for a party to make stuffed mushrooms? Why not just make a platter of them for TheBetterHalf and myself? And that’s exactly what I did tonight!
TGIF! After our delicious birthday dinner last night, TheBetterHalf and I are just chilling at home tonight and giving our stomachs (and our wallet) a break! But I still wanted to whip up something delicious and special for us to enjoy and these stuffed mushrooms were the perfect thing. Bonus – they are SO easy to prepare! Plus, they are gluten free thanks to cracker crumbs made from Breton gluten free crackers!

That my friends is what our Friday night is looking like. A nice cheese and cracker platter and some stuffed mushrooms! Not pictured: a few ice cold beers. It is the weekend after all!
These stuffed mushrooms are pretty amazing if I do say so myself. The filling is so flavorful and savory, and the best part about it is the delicious crunch from the cracker crumbs. Traditionally, stuffed mushrooms are made with bread crumbs but I wanted to create a gluten free recipe so I subbed in cracker crumbs, made from Breton White Bean with Salt and Pepper crackers. I absolutely love the flavor that these crackers give to the filling, and the texture is just perfect.
And did I mention how easy these are to make? All you need are mushrooms, Breton crackers, shredded cheese, parsley, thyme, garlic, salt, pepper, cayenne, and olive oil. First you roast the mushrooms for 15 minutes to start bringing out their delicious, earthy flavor. Then just mix together the filling ingredients and spoon some in each mushroom. They go back in the oven for about 20 minutes, until the filling is nice and crispy on top and the mushrooms are perfectly roasted. Then you have the perfect bite-sized snack / appetizer / dinner – all GF!
Now I do not eat gluten free, but so many people that I know need to so I have been experimenting more with GF recipes and products. I was very curious to see how gluten free crackers would taste. And I was so pleasantly surprised when I tried these – they taste amazing! The texture is the same as a normal cracker, and the flavor from the white bean and salt & pepper is delicious. Plus I love how healthy they are. Each serving contains two grams of fiber and two grams of protein. These new crackers are also low in saturated fat, contain no artificial colors or flavors, no cholesterol and are trans-fat free.

Ingredients
- 12 Breton Gluten-Free Crackers
- 1/2 cup shredded cheese (I used 1/4 cup mozzarella and 1/4 cup parmesan)
- 1 garlic clove, minced
- 2 Tablespoons chopped parsley
- 1 teaspoon chopped thyme
- salt and pepper, to taste
- dash cayenne
- 28 white mushrooms, stemmed
- 1/4 cup + 2 Tablespoons extra virgin olive oil
Instructions
- Preheat oven to 400 degrees F.
- Toss mushrooms with 1/4 cup olive oil. Place on a sheet pan, round side up, and roast for 10 minutes. Flip mushrooms and roast for 5 more minutes. Remove from oven, drain any excess liquid off pan and blot any excess moisture off mushrooms. Sprinkle with salt and pepper.
- Meanwhile, make the stuffing.
- Place crackers in a food processor and process until they are fine crumbs.
- Mix the cracker crumbs, cheese, garlic, parsley, thyme, salt, pepper, and cayenne in a medium bowl. Add 2 tablespoons of olive oil and stir to combine. Add a bit more oil if necessary, until the mixture holds together.
- Fill each mushroom with filling, using your fingers to pack it in tightly.
- Bake for 20 minutes, until filling is golden brown. Cool for a few minutes then serve.

I only recently started liking stuffed mushrooms… I was never a huge fan before, because I didn’t love mushrooms. The older I get, the more my palate has changed, and I really do enjoy them now! Something about a slightly crunchy top and that creamy texture in the middle– perfection! Way to go making them GF, Cate!
