Stuffed Mushrooms {Gluten Free} & a GIVEAWAY

Roasted mushrooms are stuffed with a delicious savory filling and baked until golden brown and crunchy. Bonus: these stuffed mushrooms are entirely gluten free!

Stuffed Mushrooms are such a classic party food. They are the perfect passed appetizer – they look pretty on a platter, can be eaten in one bite, and are absolutely delicious! So I thought why wait for a party to make stuffed mushrooms? Why not just make a platter of them for TheBetterHalf and myself? And that’s exactly what I did tonight!

TGIF! After our delicious birthday dinner last night, TheBetterHalf and I are just chilling at home tonight and giving our stomachs (and our wallet) a break! But I still wanted to whip up something delicious and special for us to enjoy and these stuffed mushrooms were the perfect thing. Bonus – they are SO easy to prepare! Plus, they are gluten free thanks to cracker crumbs made from Breton gluten free crackers!

Mediterranean Spiced Roasted Leg of Lamb with a Yogurt Mint Feta Sauce

A boneless leg of lamb is crusted with Mediterranean herbs and roasted in the oven. The result is a delicious meal that is impressive and surprisingly easy to make!

I must say, I am quite impressed with myself today. Look at that gorgeous leg of lamb!! I usually stick to cookies and bread and donuts, and the “real food” I post typically ends up being meat-free. But not today! Today meat, specifically lamb, is the star of the show. TheBetterHalf has never been happier.

And as impressed as I am with myself, I have to tell you that this meal was actually so easy to prepare! Boneless leg of lamb is really a simple dish to make. The oven does most of the work for you!  I crusted mine with a mix of Mediterranean herbs and then roasted it with some potatoes and carrots. Then I finished it with a simple yogurt sauce with feta and fresh mint. The resulting meal was delicious and impressive, and surprisingly easy!

Farro Salad

Arugula, cherry tomatoes, and fresh herbs are mixed with farro and tossed in a lemon vinaigrette. Shaved parmesan and roasted pistachios finish off this amazing farro salad!

Do you ever have an amazing dish at a restaurant that you wish you could recreate at home? I had the most incredible farro salad at one of our favorite restaurants in NYC, Charlie Bird.  I know it doesn’t sound that exciting – I mean it is salad after all.  But I promise you, this salad is memorable.  And when I got home from dinner and googled it, I found a  recipe in the New York Times for the farro salad! Lucky me!

Sidenote – Charlie Bird is delicious.  If you live here and haven’t tried it yet, you really should!  Their chicken is outstanding!   Also when we were eating there once with TheBetterHalf’s parents, we saw Jerry Seinfeld and his family.   One of our best celeb sightings!

Lentil Salad with Olives, Mint, and Feta

Lentils are cooked until creamy but firm, tossed in a mustard vinaigrette, and then mixed with kalamata olives, feta cheese, and fresh mint. Healthy, easy, and delicious!

Have you heard of Meatless Monday? According to Wikipedia: “Meatless Monday is an international campaign that encourages people to not eat meat on Mondays to improve their health and the health of the planet.”  Sounds like a win win to me!

Plus, I always try to be a little healthier on Mondays. It feels good to start the week off on a healthy foot, and to undo some of the damage from the weekend – because I don’t know about you, but my weekends are usually full of eating pretty much whatever I want.  So I have a great meatless and healthy recipe to share with you today – Lentil Salad with Olives, Mint, and Feta….

Minty Pea Prosciutto Toast

Oh wow, this month has flown by! I seriously can’t believe it is already Feb. 28. And, already time for another Mystery Dish post! The amazing Christine from I Dig Pinterest picked the ingredients for us this month. They were:

Fresh Mushrooms
Pork
Spinach
Cream Cheese
Pineapple
Butterscotch Chips
Macadamia Nuts
Sriracha Hot Chili Sauce
Ritz Crackers
Tortillas

I was seriously considering making spinach artichoke dip with mushrooms and bacon, using cream cheese and sriracha, and having ritz crackers and homemade tortilla chips for dipping! But then I decided to settle down. No need to get so wild. Plus, I was dying to make this pea toast!
