What is it about the start of a new month that makes me want to eat healthier? There is just something about the calendar starting over at 1 that inspires change and brings new hope. So I have a great smoothie recipe for you today in case you are also motivated by the new month to eat healthier  – a cara cara orange coconut strawberry smoothie!

I love smoothies for so many reasons, but one is that you really don’t need a recipe at all. Just throw a bunch of things in a blender and press a button. You really can’t mess it up, and that’s the beauty of a smoothie!

Did anyone pull any fun pranks on April Fool’s day? Personally, I am not a fan of practical jokes – I think that could be the result of growing up with two brothers whose favorite pastime was sneaking under the piano while I was playing and grabbing my leg. It used to scare the sh*t out of me! Mom, maybe that’s why I stopped playing the piano… But anyway, I did think this blog post yesterday was pretty funny!

Back to fruit and smoothies and healthy things! Remember these cara cara orange mini muffins I made a few weeks ago? Well I got a little excited about the beautiful oranges when I was buying them, and thus had quite a few extra. They were so juicy, so I figured why not make some fresh squeezed cara cara orange juice?! I LOVE fresh squeezed orange juice, and the cara cara orange juice was especially delicious. Cara cara oranges have a very similar flavor to regular oranges, but they are slightly sweeter. And somehow the pinky color just makes it taste better to me 🙂

And then I decided to take the fresh juice to a new level and turn it into a smoothie! Wow – fresh squeezed juice makes such a difference in smoothies! This was so flavorful.

I used coconut yogurt (I talked about my obsession with coconut chobani in this post) and frozen strawberries (my favorite smoothie fruit). The flavors work so well together. So simple, yet so delicious!! I recommend blending together the base ingredients, then tasting the smoothie to see if it needs to be sweetened. If it does, add in a little agave or honey.  This is a great smoothie to make for breakfast, as post-workout fuel, or even for dessert!

Cara Cara Orange Coconut Strawberry Smoothie

Fresh Cara Cara orange juice is blended with frozen strawberries and coconut yogurt for a healthy, delicious, and easy smoothie!

Ingredients

  • 1 1/2 cups frozen strawberries
  • 1 5.3 oz container coconut yogurt (I used Chobani)
  • ½ cup fresh squeezed cara cara orange juice (from about one orange)
  • 1 tsp agave or honey (more or less to taste)

Instructions

  1. Place all ingredients except agave in a blender and blend until smooth. Taste, and add agave if more sweetness is desired.

    Cate, this looks so refreshing and I love the beautiful color! I am also all about coconut yogurt but haven’t used it in a smoothie yet. That must be immediately remedied 🙂

    Maybe it’s the warm weather or the fact that it is one month closer to my wedding, but I also feel the urge to eat healthier! Along with a yearning to kick it off with this smoothie…especially since i have two cara caras hanging out on my counter!

      Beth – you will laugh when you hear this – I make my smoothies with an immersion blender!!! Haha – there just isn’t enough room in my kitchen for another appliance, but the immersion blender works surprisingly well!!

    I know what you mean about being healthier at the start of the month… and at the end of the month it’s like an excuse to eat as much crap as possible! For me, at least. Anyway, I love the sound of this! And so quick and simple too 🙂

    I just discovered cara caras earlier this year, and they are so good! I love how intensely citrusy they are. I can see how they’d make for a super special smoothie, especially when paired with coconut & strawberries! Pinning this gorgeous treat!

    Ahh, this sounds so good! I’ve also never had coconut yogurt, but I just bet it would be so delicious. Especially in this smoothie — I adore Cara Cara oranges like whoa. Love this!
