I have the ultimate fall hors d’oeuvres recipe for you today. Pumpkin Beer Cheese Dip, with homemade soft pretzel bites. This is football party food at its finest! The pumpkin beer gives the dip a nice spiced and slightly sweet flavor – it pairs perfectly with Boar’s Head Vermont Cheddar Cheese! And of course you can’t have beer cheese dip without soft pretzels for dipping. This will be the first appetizer to disappear at your next party!
TheBetterHalf introduced me to Boar’s Head when we were in college. He has always been a sandwich connoisseur and Boar’s Head was (and still is) his absolute favorite brand of meats and cheeses. So it was quite upsetting for him when he arrived in South Bend, IN our freshman year and realized that no one in the whole city sold Boar’s Head meats. To him, it felt like the dark days of prohibition. Notre Dame has a lot going for it, but the food scene is not one of those things. I made frequent trips to Chicago during college to visit my friends there, and I would always try to bring him back a Boar’s Head sandwich. Our love of food and eating started very early in our relationship…there is a reason our blog tagline is Always hungry!

To make homemade soft pretzel bites, follow this recipe and then instead of shaping the dough into pretzels, just cut it into little nuggets!
Cheddar cheese is melted with pumpkin beer and spices to make this Pumpkin Beer Cheese Dip. Served with soft pretzel bites for dipping, this is the perfect fall appetizer!
Ingredients
- 1 (12oz) pumpkin beer, at room temperature
- 2 Tablespoons unsalted butter
- 2 Tablespoons flour
- 2 teaspoons worcestershire sauce
- 1/4 teaspoon pumpkin pie spice
- dash cayenne
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 10 ounces Boar's Head Vermont Cheddar Cheese, shredded (do not use pre-shredded cheese)
Instructions
- Pour the beer into a measuring cup and stir a few times, to get most of the carbonation out of the beer.
- In a medium pot over medium heat, melt the butter. Add the flour and whisk constantly for 3 - 4 minutes, until the mixture is smooth and a light tan color. Slowly add the beer, while constantly whisking. Increase heat to medium high and bring mixture to a simmer for about 3 minutes, whisking frequently. Add worcestershire sauce, pumpkin pie spice, cayenne, salt and pepper, and continue whisking until mixture begins to thicken, about 3 minutes.
- Add the cheese in 3 parts, whisking until cheese has melted after each addition. Taste the cheese and adjust seasoning as desired, then serve immediately.
