Today’s post is a very special one – some blog friends and I are throwing a virtual bridal shower for our friend Nora from A Clean Bake. She is getting married in just a few short weeks! I made crunchy Toasted Almond Granola Bars. This is my first time making granola bars, and I am officially obsessed. The flavor of these granola bars is so nutty and delicious!
Granola bars might not sound all that exciting, but let me tell you – these are delicious. I seriously could not stop eating them! The flavor from the toasted oats and almonds is so nutty and delicious. And addicting! The bars are super crunchy – I loved breaking them into pieces and putting them in yogurt. So perfect for breakfast or snack!

Ingredients
- 7 cups (21 ounces) old-fashioned rolled oats
- 1/2 cup vegetable oil
- 1/2 teaspoon salt
- 1 1/2 cups whole almonds (can also use pecans or walnuts)
- 3/4 cup honey
- 3/4 cup (5 1/4 ounces) packed brown sugar (light or dark brown)
- 1 tablespoon vanilla extract
- 2 teaspoons ground cinnamon
Instructions
- Preheat oven to 375 degrees F. Line an 18x12 inch rimmed baking sheet with aluminum foil.
- Mix oats, oil, and salt in a large bowl until all oats are coated. Pour onto prepared baking sheet and spread into an even layer. (save bowl for later). Bake the oats, stirring every 10 minutes, until pale golden brown, about 30 minutes.
- Lower oven temperature to 300 degrees.
- Take 3/4 cup of the nuts and coarsely chop. Process the other 3/4 cup in a food processor until finely ground, about 30 seconds.
- Add honey and brown sugar to a small saucepan and cook over medium heat, stirring often, until the sugar is fully dissolved, about 5 minutes. Remove from heat then stir in vanilla and cinnamon.
- Combine oats, all nuts, and honey in the large bowl and stir until oats and nuts are evenly coated.
- Transfer the mixture to the baking sheet and spread into an even layer. Using a rubber spatula, press the mixture into a very flat, tight layer. Make sure to press forcefully.
- Bake until golden, 45 - 50 minutes. Cool in the pan for 10 minutes, then remove and cut into bars with a sharp knife. The bars will get crunchy as they cool. Cool completely before storing.
