I put potato chips in a cookie and I loved it! Almond Butter Chocolate Chunk Potato Chip Cookies are the ultimate sweet and salty cookie – they are addicting!

It is time for another round of Mystery Dish! I took a few months off from this fun challenge, but I am back! Every month a group of my blog friends and I choose a list of ingredients, and we each have to come up with a recipe using some of the mystery ingredients. It is so much fun to come up with new recipes, and it always challenges me to step out of my comfort zone a bit in the kitchen. Which leads me to….

Potato Chip Cookies…yes, I put potato chips in my cookies. I really thought that I would never put potato chips in my cookies. I know that it has been done many times before, but to me it seems so, well, weird. But, Mystery Dish made me do it. I had no choice. Potato chips were on the list this month along with chocolate chunks and almond butter and I just knew that I had to make almond butter chocolate chunk potato chip cookies. And I am so glad that Mystery Dish lead me to this cookie creation, because these cookies are so good! I still think potato chip cookies are kind of weird, but I can get over it because they taste delicious!

Our host of Mystery Dish this month was Mary Francis from The Sweet Tooth Life.  Her blog is full of delicious healthy desserts – and she manages to do an amazing job blogging while in high school!  She’s awesome.  Here is her list of ingredients:

1. Clams
2. Ramen noodles
3. Blueberries…
4. Heavy whipping cream
5. Chocolate chunks
6. Potato chips
7. Kale
8. Almond butter
9. Chiles

And as I mentioned before, I just knew that I needed to combine almond butter with chocolate chunks and potato chips to make a sweet and salty cookie!  These cookies are nice and soft, but the potato chips add a great crunch.  I love almond butter, and they give these cookies a great flavor.  We couldn’t stop eating these addicting cookies!

Almond Butter Chocolate Chunk Potato Chip Cookies

Yield: 20 cookies

Almond Butter Chocolate Chunk Potato Chip Cookies

I put potato chips in a cookie and I loved it! Almond Butter Chocolate Chunk Potato Chip Cookies are the ultimate sweet and salty cookie - they are addicting!

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened to room temperature
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup almond butter
  • 1 egg
  • 1/2 teaspoon vanilla
  • 4oz chocolate, chopped into chunks
  • 1 1/2 cups crushed potato chips

Instructions

  1. Preheat oven to 350 degrees F
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, beat butter with brown sugar and sugar until light and fluffy. Beat in the almond butter. Add the egg and beat until well combined. Stir in the vanilla.
  4. Add the dry ingredients to the wet ingredients, and mix until combined. Fold in the chocolate chunks and the potato chips.
  5. Scoop the dough into 2 tablespoon balls and place on a cookie sheet, 2 inches apart.
  6. Bake for about 10 minutes, until the cookies are slightly golden brown at the edges. If the cookies are too puffy, press on the warm cookies gently with the back of a spatula. Allow the cookies to cool on the sheet for a few minutes, then remove to a wire rack to cool completely.

    I swear, the farthest almond butter ever makes it past the jar (or my mouth) in this house is on toast. I really need to use some to make these cookies, they sound amazing! Great use of your ingredients.

    My Mum is going to love these cookies! Her favourite treats are salty potato chips and chocolate! Combine them in a cookie, and what more could girl wish for 🙂

    Cate, this is perfection! One of my husband’s favorite desserts from me is my “compost cookies,” which have chips and coffee grounds in them, if that gives you any indication how trashed up they are, haha. These sound delicious! Nice work on your mystery challenge!
