One of my favorite things about the Christmas season is cookie baking. And although it is hard to top eating cookies, I absolutely love giving my cookies away as gifts. Nothing beats a homemade gift. I especially love giving away festive cookies that you might only make this time of year, and my Pistachio Wreath Cookies couldn’t be more seasonal – the red jam, the green pistachios, the wreath shape – these are basically Christmas in cookie form!

I don’t know about you, but I definitely get in breakfast routines. I will eat the same thing every weekday morning for weeks or even months at a time. The past few weeks it has been a mini bagel with cream cheese and fresh berries, but for pretty much all of June and July it was exactly what is pictured here – fresh fruit (preferably a ripe peach with some berries) with Greek yogurt and my classic granola. I go through this breakfast phase pretty much every summer – the second it starts to get warm, I just crave a granola parfait. And I love making it with homemade granola – I think it is so much better than store bought!

These cookies. They are really going to be the end of me. I have been trying to eat healthy since we got back from our trip. If you’ve spent any amount of time with me, you know I love my snacks! I seriously can’t go two hours without snacking on something. But when you snack as much as I do, the key is to keep the snacks healthy and  nutritionally balanced. That’s why one of my favorite snacks to reach for are pistachios! They are a great way to get a salty, crunchy fix while sticking with a healthy diet.

Plus, pistachios pair so well with other foods to create perfect snacks or mini-meals. One of my favorite pairings is pistachios with Greek yogurt, blackberries, and green tea to drink. This is literally the perfect snack –  protein from the yogurt, a little healthy fat (plus protein and fiber) from the pistachios, vitamins and fiber from the berries, and antioxidants from the green tea. Talk about a power snack! And filling too. I add a small drizzle of honey too since I like things sweet!
