These cookies. They are really going to be the end of me. I have been trying to eat healthy since we got back from our trip. Because as much as I want to believe that gelato three times a day is normal, I know it isn’t. But then I made these cookies, and I can’t stop eating them. Do other people eat three cookies in one sitting?? Let’s go with yes, because these Pistachio Dark Chocolate Chunk Cookies are just too good to only have one. They are salty and sweet, soft but still chewy, and just bursting with dark chocolate – cookie perfection….

We are throwing a party today! It is a BABY SHOWER for my good friend Zainab aka Blahnik Baker. Zainab was one of my first blog friends, and she is absolutely amazing. In addition to being an incredible baker, she is such a great person – so supportive, kind and fun! She is going to be the most amazing mom, and I’m so happy to be celebrating her today!

She is a coconut fanatic (see here and here) so we are throwing a tropical themed party for her. I’m bringing Mango Coconut Donuts to the party! ┬áDonuts are kind of my thing, so I knew I had to make some coconut donuts for this coconut themed baby shower!

We are back from our trip! We had the most amazing time – I shared a ton of photos on Instagram. I hope it wasn’t too many…I just couldn’t resist posting all of the gorgeous views and delicious meals! And I can’t wait to tell you more – a Portofino post will be coming soon. But first, let’s have cake.

Thanks to jetlag, I was up super early on Saturday morning and the first thing I wanted to do was bake! I missed the kitchen! I get so much inspiration when I travel, and want to recreate everything that I ate. We saw lots of olive oil cakes and lots of cornmeal in the breads and pastries in Italy, so that is what inspired me to make a Cornmeal Olive Oil Blueberry Cake!

Pineapple Upside Down Cake | ChezCateyLou.com

With all the baking that I do, you would think that I have tried every classic recipe at least one time. Nope. Not even close. There are just SO many amazing recipes out there. My to-bake list is never-ending. However I am trying to knock out some of the most classic recipes, and Pineapple Upside-Down Cake is on that list! I know it isn’t that popular anymore, but it is such a well-known old fashioned recipe that I just had to try my hand at making one. Plus, I’m not sure how this happened, but I had never actually eaten a piece of pineapple upside-down cake until I made this one! Verdict: I am a fan!

Cake Batter Puppy Chow

Classic Puppy Chow gets an upgrade with the flavor of cake batter and tons of sprinkles! This Cake Batter Puppy Chow is sweet, crunchy and totally addicting!

Cake Batter Puppy Chow | ChezCateyLou.com

The classic version is made with peanut butter and chocolate mixed into chex cereal and topped with powdered sugar, and everyone in my school was obsessed with it. Little bags of puppy chow were the first thing to disappear from the bake sale tables! We had a lot of bake sales in high school. I can only imagine how excited everyone would have been if someone brought in this Cake Batter Puppy Chow!

The recipe comes from my friend Lynn at Fresh April Flours! Today I am helping her celebrate the release of her cookbook! She wrote a cookbook of over 20 puppy chow recipes, and this is one of the featured recipes.
