Is everyone gearing up for back to school? I can’t believe summer is almost over! Although the benefit of not having kids and not being in school is that summer isn’t really over until the weather starts to get cold! So even though fall is my favorite season, I’m not quite ready to embrace it just yet. I saw Pumpkin Spice Lattes this morning at Starbucks – it just seems wrong when it is 90 degrees outside and I’m wearing a white dress!
But even though I’m not quite on board with fall, I can get totally get on board with back to school treats, like these Mini M&M cookies! These are the perfect treat to pack in your kid’s lunchbox for the first day of school.

I love mini anything. For some reason, food just tastes better to me when it is tiny! I even think M&Ms taste better in their mini form. Plus they are just so cute.
Although the one problem with mini cookies is that they are too easy to eat. These little guys turned out to be quite dangerous – I just kept popping them into my mouth, one after another! But since they are mini, it is ok to eat 5 of them….right?
These M&M Cookies are so soft and chewy, my favorite texture in a cookie. Make sure to underbake them just slightly to keep the softness.
Your kids will absolutely love these cookies. And even if you don’t have kids, these cookies will still be a hit. TheBetterHalf and I had no problem finishing the entire batch!

Ingredients
- 1 1/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 stick butter, at room temperature
- 1/2 cup packed light brown sugar
- 1/4 cup sugar
- 1 large egg
- 1/2 teaspoon vanilla
- 1 cup mini M&Ms
Instructions
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together butter and sugars until light and fluffy. Add the egg and beat until well combined. Add the vanilla and mix to combine.
- Add the dry ingredients to the wet ingredients and mix until combined. Fold in 3/4 of the mini M&Ms, reserving the rest for the top of the cookies.
- Chill the dough for at least one hour, or up to 48 hours.
- When ready to bake, preheat oven to 350 degrees F. Scoop the dough onto a cookie sheet, using about 2 teaspoons of dough for each cookie. Bake for 6 - 7 minutes. When cookies come out of the oven, immediately press a few M&Ms into the tops of the cookies. Let the cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
