I made these Chocolate Peanut Butter Chip Muffins before we left on our trip and we loved them so much that I just had to take a quick break from vacation to share them with you!
The most popular recipe by far on my blog are my Peanut Butter Chocolate Chip Muffins. And, they are also one of the most popular recipes in my household. TheBetterHalf likes to take muffins to work, and he is constantly requesting those muffins – he is a choco pb fanatic. So to change things up a bit, I thought it would be fun to reverse my recipe and make a chocolate muffin stuffed full of peanut butter chips!
I like to lighten up my muffin recipes when I can. I cringe when I see muffin recipes that call for 3/4 cup of oil and over a cup of sugar. Of course I’m all about decadent dessert and breakfast recipes at times, but to me muffins can taste just as good without all the sugar and with a few substitutions for some of the fat – namely Greek yogurt and applesauce! So even though these chocolate peanut butter chip muffins look super rich and decadent, they are on the lighter side! I don’t want to call them skinny because they do have some oil, and peanut butter chips aren’t exactly diet food. But compared to a lot of chocolate muffin recipes out there, these are pretty light! And they are absolutely delicious.

Ingredients
- 1 cup flour
- 1/2 cup whole wheat flour
- 1/2 cup cocoa powder
- 1 Tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup brown sugar
- 2 Tablespoons sugar
- 2 large eggs
- 1/3 cup oil
- 2 Tablespoons applesauce
- 1/2 cup Greek yogurt
- 1/2 cup milk
- 1 teaspoon vanilla
- 1 cup peanut butter chips
Instructions
- Preheat oven to 425 degrees F. Grease a 12 count muffin tin with nonstick cooking spray.
- In a medium bowl, whisk together flour, whole wheat flour, cocoa powder, baking powder and salt.
- In a large bowl, whisk together brown sugar, sugar, eggs and oil until very well combined, at least 1 minute. Add the applesauce, yogurt, milk, and vanilla and whisk until combined.
- Add the wet ingredients to the dry and stir until just combined. Fold in the peanut butter chips.
- Spoon the batter into the muffin tin, filling each cavity evenly.
- Bake for 5 minutes at 425, then turn heat down to 350 and bake for 10 - 12 minutes longer, until a toothpick inserted into the center comes out with a few moist crumbs. Cool the muffins in the tin for 5 minutes, then turn out onto a wire rack to cool completely - or eat warm!
Notes
You can sub 1/2 cup all-purpose flour for the whole wheat flour.

I do love a good chocolate muffin recipe, but you are right – I would rather make them at home so I can lower the fat and sugar a little and feel good about my treat foods!
