Irish Cream Cheesecake Brownies

February is over! Hooray! And that means that it is almost time for St. Patrick’s Day! TheBetterHalf and I are both part Irish (his mom is a Duffy, mine is a Murphy) and we both went to Notre Dame, so needless to say we are big fans of this holiday.  I have several St. Patrick’s Day goodies up my sleeve to share with you over the next two weeks. Let’s start with Irish Cream Cheesecake Brownies, made with of course, Baileys Irish Cream.

So what is Irish Cream anyway? It is a blend of Irish whiskey, cream, and a hint of chocolate / coffee / almond / vanilla flavor. Irish cream is delicious over ice or in coffee. The Notre Dame students might or might not have brought large thermoses of Irish Cream mixed into coffee to class on St. Patrick’s day…hey, we have a lot of Irish pride at that school!

But I must say, my favorite way to enjoy this drink is baked into Irish Cream Cheesecake Brownies. Booze mixed into baked goods? What’s not to love about that!

These delicious treats have two layers – the chocolate brownie layer and the cheesecake layer – and Irish cream is in both. There is tons of Irish cream flavor in here!

So first, mix up the brownie batter and then put it into the pan. Then mix up the cheesecake layer, and dollop it on top of the brownie batter. Finally, it is time for the swirling! Using a butter knife, gently swirl the cheesecake layer with the brownie layer. Let your inner artist shine! Use those marbling techniques that you learned in childhood art class (TheBetterHalf informed me that not all grades schools learned “marbling techniques”…) ! It is really kind of fun – I think the swirls look so pretty!

You don’t want to get too heavy handed with the swirling though. You want it to be mostly brownie on the bottom, and mostly cheesecake on the top.

The Baileys Irish cream flavor in these cheesecake brownies is SO good. There is just a hint of whiskey in the background, and the other flavors in the Baileys are really complemented by the chocolate and cream cheese. These are a perfect way to celebrate St. Patrick’s Day and your Irish heritage! Even if you aren’t Irish 😉

Irish Cream Cheesecake Brownies

Baileys Irish Cream is mixed into both the brownie batter and the cheesecake swirl, giving these Irish Cream Cheesecake Brownies the most delicious flavor. Perfect for all your St. Patrick's Day celebrations!

Ingredients

    For the Brownie layer
  • 3 oz dark chocolate, chopped
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup sugar
  • 2 large eggs, at room temperature
  • 2 tablespoons Baileys Irish Cream
  • 1/2 cup all purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (optional)
  • For the Cheesecake layer
  • 8 ounces cream cheese, at room temperature
  • 1/4 cup sugar
  • 1 egg, at room temperature
  • 2 tablespoons Baileys Irish Cream

Instructions

  1. Preheat oven to 325 degrees F. Spray an 8inch square baking pan with nonstick cooking spray. Cut a long strip of parchment paper or foil and lay it on the bottom of the pan with the ends hanging over both sides of the pan. This creates handles to remove the cooked brownies from the pan.
  2. For the Brownie layer
  3. Place the chocolate and butter in a medium microwave safe bowl. Microwave for 30 seconds, then stir the mixture. Continue microwaving and stirring in 10 second intervals until the chocolate is fully melted and the mixture is smooth. Whisk in the sugar until smooth. Let the mixture cool slightly .
  4. In a small bowl, whisk together the flour, baking powder, and salt.
  5. Whisk the eggs into the slightly cooled chocolate mixture, one at a time, until well incorporated. Mix in the Baileys Irish Cream.
  6. Add the flour mixture to the chocolate mixture and stir until just combined. Fold in the mini chocolate chips (if desired)
  7. Spoon the batter into the prepared pan
  8. For the Cheesecake layer
  9. In a medium bowl, beat the cream cheese, sugar, egg, and Baileys Irish Cream until very smooth.
  10. Spoon the cheesecake mixture in large dollops on top of the brownie batter. Use a table knife to gently swirl the batter and cheesecake.
  11. Bake for 40 - 50 minutes, until the edges of the brownies look slightly golden brown and the center is not quite firm when touched lightly, but is set.
  12. Cool the brownies completely in the pan, then remove using the parchment/foil handles. Wait until they are completely cooled to cut.
