These Cream Cheese Biscuits are so light and fluffy thanks to frozen cream cheese and butter. This will become your new favorite biscuit recipe!

I may not be from the south, but I love a good biscuit! Every time I see a biscuit on a menu, I just have to order it. There is something about biscuits that are so comforting and delicious.

There are so many recipes and methods for making biscuits. It is amazing that a food that seems so simple could actually be so complex. I have made many varieties of biscuits, but I think that this recipe for cream cheese biscuits might be my new favorite. They are so amazingly light and fluffy, and have a delicious rich flavor from the combo of the butter and cream cheese.

Ok I have to tell you, I made these biscuits ages ago! The pictures have just been sitting on my computer, and I kept forgetting to post them. Seasonal delights like peach tarts and zucchini bread kept pushing these biscuits to the back of the list. But no more! Today it is time for cream cheese biscuits to have the spotlight!

Time for some biscuit talk. There are three secrets to keeping these biscuits super light and fluffy.

1) Freezing the butter and cream cheese before making the dough.

The butter and cream cheese are cut into cubes and frozen for 30 minutes before you mix up the dough in your food processor. This ensures that the dough stays nice and cold, and that leads to a light and tender biscuit. The butter and cream cheese also give the biscuits an incredible rich flavor.

2) Buttermilk.

Any good biscuit recipe uses buttermilk. Buttermilk is a secret weapon in baking – it keeps things super moist and fluffy. After you mix together the dry ingredients with the frozen butter and cream cheese, you stir in buttermilk until everything is just combined.

3) Cutting the biscuits into squares rather than circles.

This method of shaping biscuits allows for minimal handling of the dough, and no re-rolling. Overworking dough results in tough biscuits – not something that anyone wants!

Cream Cheese Biscuits

Cream Cheese Biscuits

These Cream Cheese Biscuits are so light and fluffy thanks to frozen cream cheese and butter. This will become your new favorite biscuit recipe!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups cake flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 4 ounces cream cheese, cut into 1/2-inch pieces and frozen 30 minutes
  • 4 tablespoons unsalted butter, cut into 1/2-inch pieces and frozen 30 minutes
  • 1 cup plus 1 tablespoon buttermilk

Instructions

  1. Preheat oven to 450 degrees. Line a baking sheet with parchment paper or a silicone mat.
  2. Pulse all-purpose flour, cake flour, sugar, baking powder, salt, baking soda, cream cheese, and butter in food processor until mixture resembles coarse meal. Transfer mixture to large bowl. Stir in buttermilk until combined (dough may appear slightly dry).
  3. Turn out dough on a lightly floured surface and knead briefly until dough comes together. Roll dough into 8 by 6-inch rectangle, about ยพ inch thick. Using a sharp knife, cut dough into twelve 2-inch squares and transfer to prepared baking sheet. Bake until light brown, 12 to 15 minutes. Transfer to a wire rack to cool for about 5 minutes. Serve warm.
