So how are those New Year’s resolutions going? Are we done with them yet? I mean, we’re almost three weeks into January – I think that’s enough. Or at the very least, can we take a break? Yes? Glad we’re on the same page. Because I need some cookies. I haven’t made any allllll year. That’s way too long. So without further ado, I present the first cookie for 2014 – pretzel chocolate chip cookies! Yep, they are as good as they sound. And as if the sweet and salty combo isn’t enough, these are also made with browned butter! Definitely resolution-breaking-worthy.
I professed my love for browned butter here and here. It is so nutty and rich – it adds the best flavor to cookies! When I first made this brown butter chocolate chip cookie recipe, it instantly became one of my favorites. The cookies I have for you today are a delicious twist on that classic “perfect” cookie.
A cup and a half of salty crunchy pretzels are crushed and then stirred in this dough in place of some of the flour. The resulting cookie has an amazing salty flavor that pairs so well with the brown sugar and, of course, with the chocolate! It is the ultimate sweet and salty flavor combo. And really, what is better than sweet and salty together? Not much, in my opinion.
Another reason why I love this recipe is that there is no dough chilling required. After the brown butter is cooled, you just mix together all of the ingredients, bake for about 8 minutes, and then you have warm, melty, gooey chocolate chip cookies! Instant gratification. I’m really sorry about this, but all those New Year’s resolutions do not stand a chance around these cookies. Unless of course, your resolution was to eat more cookies!

Ingredients
- 1 cup unsalted butter
- 1 1/4 cup light brown sugar
- 2 large eggs + 1 large yolk
- 2 tsp vanilla
- 2 1/4 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups crushed pretzels
- 2 cups chocolate chips
Instructions
- Preheat oven to 350 degrees F
- In a medium saucepan over medium heat, melt the butter. Once it is almost fully melted, start swirling the pan constantly. It will crackle and then will slowly start to smell nutty and get brown. Watch it carefully so that it doesn't burn. Transfer brown butter to a bowl and allow it to cool for about 10 minutes.
- Beat together the brown butter and brown sugar until well combined. Add in the eggs and egg yolk and beat thoroughly. Mix in the vanilla.
- In a separate bowl, stir together the flour, baking soda, and salt. Add the flour mixture to the butter mixture and stir to combine. Stir in the pretzels. Fold in the chocolate chips.
- Scoop the dough onto cookie sheets, spacing the cookies about 2 inches apart. Bake for 8 - 10 minutes, until slightly golden brown at edges, but still a bit undercooked in the centers. Cool cooked for 3 minutes on cookies sheets, then transfer to a wire rack to cool completely.
