Mushroom Ginger Congee is a thick and hearty Asian soup that is made with oats! This vegan soup is easy to make, super healthy, and tastes delicious!

Do you ever get in little food routines? I have weeks where I end up eating the same thing pretty much every day. And last week, it was this Mushroom Ginger Congee for dinner every night! Sidenote – TheBetterHalf was working late that week…he would not approve of only soup for dinner.  Although let’s be serious, I didn’t only have soup…I followed the congee with dessert of course!  It is all about balance, right?

This soup  is so simple to make and is so warm and comforting. Plus, it doesn’t get much lighter – only 140 calories and 1.5 g of fat per serving, and it is very filling!  This is a great recipe to make when you aren’t feeling well, because the ginger and mushroom will both boost your immune system. Healthy comfort food that tastes amazing and helps you feel better – no wonder I ate this for dinner every night!…

Happy Friday everybody! Is anything better than Friday? I really don’t think so! Sure you still have to wake up and go to work or school – but the promise of the weekend is ahead. It is such a great feeling! And what better way to celebrate Friday than with cookies – carrot cake cookies to be exact. How’s that for some alliteration?!

These aren’t just any carrot cake cookies – these are for the Mystery Dish challenge! That’s right, it is already time for another Mystery Dish challenge. In case you missed some of my other posts, Mystery Dish is a fun group that I’m part of with some of my blogging friends. Every month, the host sends out a list of ingredients, and we have to come up with something using the “mystery” ingredients. It is kind of like the show Chopped, with a lot less pressure!

Gingerbread Cookies and St. Frank Textiles

This recipe for soft and chewy gingerbread cookies is a Christmas staple in my house! You can decorate them with a simple icing and sprinkles, or keep them plain!

Is there any kind of food that says Christmas  more than a gingerbread cookie? There is just something about the flavor of gingerbread that makes me think about decorating the tree by a cozy fire while Christmas music is playing in the background. And they are so much fun to make because you can choose any shape that you want! I love to get out my cookie cutters each Christmas season and play with them – it makes me feel like a kid! Of course the standard gingerbread man is adorable, but there are so many fun options.  This year I was inspired by these gorgeous ornaments  from St. Frank.

St. Frank sells handmade textiles that are sourced from artisans around the world. This holiday season they are featuring a limited edition Birds of Peace ornament set that consists of four embroidered birds, each one with a unique and beautiful pattern. So I added a new cookie cutter to my collection and got to work.

It is December 1 – let the Christmas recipes begin! I have a hard time getting into the Christmas spirit until Thanksgiving and my birthday have passed. But once they are over, I start to get so excited about Christmas. TheBetterHalf and I just got back from an amazing trip to Paris and Brussels (more to come about our trip in a future post) and both cities were all decked out for Christmas. It was gorgeous, and got me in such a festive mood!

So when I woke up at 5:00am this morning because of jetlag, naturally my thoughts immediately went to Christmas baking. And since it is a weekend morning, I focused on doughnuts, one of our favorite weekend breakfasts since I bought my Donut Pan.  And so gingerbread donuts were born!  …
