Lemon Raspberry Yogurt Cake

Tart lemon and sweet raspberries give amazing flavor to my Lemon Raspberry Yogurt Cake. Yogurt keeps it moist yet light, and it couldn’t be easier to make!

I’m back! Or am I? I’m not quite sure yet. All I know is that Friday after work I was in the mood to bake something. So I made a Lemon Raspberry Yogurt Cake. And it turned out well. And Saturday morning while Carlyle napped I decided to take some pictures. And they weren’t half bad.  So I thought maybe I should start blogging again! I realized I have kind of missed this.  Even though I have about zero free time these days, I’m going to hopefully figure out a way to start sharing recipes with you again.  We shall see how this goes…

After such a long time away, we have a lot to discuss – like the birth of my sweet baby girl, my cross country move to San Francisco, and lots of Bay Area travels – but I will save all of that for other posts. For now, I will just talk about this beautiful, summery, Lemon Raspberry Yogurt Cake….

Happy Friday! What are you up to this weekend? We are just hanging out in NYC and I couldn’t be happier! I feel like we haven’t had a relaxing weekend in the city all summer, so I am excited to just chill! And bake. Lots of baking on the agenda! And if you are looking for something delicious and summery to bake this weekend, might I suggest this Mixed Berry Galette? It is one of my absolute favorite summer desserts.

You might remember this Rustic Strawberry Peach Tart from last year. It was one of the best things I made all summer long! My Mixed Berry Galette is basically the exact same thing, except with a different filling! I decided to change the name to make it sound fancy – but don’t let the fancy name fool you. It is a beautiful summer Friday, and I can’t think of a better way to celebrate than with a Limoncello Cocktail!  This is probably the simplest recipe I have ever posted on Chez CateyLou.  And that’s why it is so perfect – you only need two ingredients to make a delicious, refreshing, and pretty summer cocktail!  That’s right – with just limoncello and club soda you can have a summer party started in no time!

Raspberry Dark Chocolate Scones

Let’s talk about scones.  Buttery, tender, delicious scones.  I’ve eaten my fair share of them, but I had never actually made scones.  So I decided to change that this past weekend.  I had some gorgeous raspberries just begging to be made into a delicious breakfast, and this recipe seemed like the perfect way to use them up and try out a new pastry!  I did not have white chocolate on hand, so I decided to use dark chocolate instead.  A little chocolate with breakfast is always a good thing – my grandfather taught me that!

So back to scones. I’ve seen them made on TV a thousand times. They always make it look so pretty and neat.  Let me tell you, my prebaked scones were pretty (because when is butter and sugar and flour not pretty?), but they sure weren’t neat!  This dough is really wet!   The recipe warned that the dough would be “slightly unmanageable” and it wasn’t kidding.  I felt like I was working with slightly dry muffin batter rather than dough!  But the recipe also mentions that “not adding additional flour results in tender scones”, and I certainly wanted my scones to be tender.  So when it was time to form the dough into a circle and cut it into scones, I turned my dough out onto a floured silicone mat, which really helps with the dough not sticking.  I also floured my hands very well, and just tried to to work the dough as little as possible. It was a bit messy getting these scones onto the cookie sheet, but once I did it was totally worth it!  The baked scones are so light and tender.  There is chocolate and raspberry in every bite, with just a hint of sweetness. So I’d say my first venture into scones was a success, although I can’t wait to practice more with other recipes!  I see pumpkin scones in my future……
