Sometimes, you just need a quick and easy dessert recipe. Maybe you forgot about your friend’s birthday. Maybe you forgot to make something for your kid’s bake sale. Maybe you just need a cookie ASAP. Maybe you kind of feel like baking but are mostly feeling lazy. Whatever the reason, I have the perfect recipe for you today! Easy cake mix cookies.
These cookies came about on Sunday night as a result of the last two items on my list. TheBetterHalf and I spent the weekend in Chicago celebrating my friend’s wedding (congrats Barb and Bennet!), and let’s just say by Sunday night, I was definitely NOT going to be getting out a million ingredients and baking something. But I wanted cookies (duh). And I hate to go a weekend without baking (most weeks get too busy to bake!). So easy cake mix cookies were born.
Just 3 main ingredients and you have cookies! Mix together a box of cake mix (I went with chocolate), ⅓ cup of melted butter and 2 eggs. Hello cookie dough. Then the fun, creative part- add in whatever you want!!! Peanut butter chips. Chocolate chips and walnuts. M&M’s. Chopped Snickers or Andes mints or any kind of candy. I could go on and on.
I went for a s’mores theme, and added mini marshmallows, crushed graham crackers, and mini chocolate chips! Now I can’t lie to you – these cookies are no substitute for the real deal. You know, the kind where you cream butter and sugar together, let dough rest for 2 days, etc etc. BUT. They are solid. And perfect for when you don’t have time to let the dough rest or to even get out your stand mixer. These cookies are cake-like – super soft and moist. And then the topping options are endless! So if you are feeling kind of creative but kind of lazy, make these easy cookies!
Easy Cake Mix Cookies Recipe adapted from Butter with a Side of Bread
Ingredients
1 18.25 oz box Devil’s Food cake mix
2 large eggs ⅓ cup butter, melted
1 – 1 ½ cups ingredient of your choice (chocolate chips, candy, nuts, etc)
Instructions
Preheat oven to 350 degrees F. Line a cookie sheet with a silicone mat or parchment paper. In a large bowl, mix together cake mix, butter, and eggs. The mixture will be thick. Add in “ingredient of your choice” and stir until combined. Using a small ice cream scoop or kitchen spoon, scoop about 2 tablespoons of dough for each cookie and place on prepared sheet. Flatten the ball slightly. Bake for 8 – 10 minutes. Remove from oven and let cool on cookie sheet for a few minutes, then transfer cookies to a wire rack to cool completely.
