TGIF, agreed? I am so ready for the weekend! And what better way to celebrate Friday than with Pizza! Specifically BBQ Chicken Pizza! The crust is No-Knead, so it is super simple to make. This pizza is perfect for Friday night dinner, or to make this weekend for a football game.

BBQ Chicken Pizza is one of our favorites lately. It is such a fun change from traditional tomato sauce pizza. I spread barbecue sauce all over a pizza crust, then sprinkle tons of cheese on top. You can use any variety of cheese you like – I used a mix of cheddar and pepperjack because I really like that flavor combo with the barbecue sauce. Then some sliced red onion and shredded chicken go on top. I HATE raw onion. But I like cooked onion, and the onion cooks on the top of the pizza – it adds a delicious flavor to the pizza. Then it is finished with some chopped fresh cilantro. The end result is a sweet and savory pizza that is irresistible!

The best thing about this pizza though is the dough. I can’t lie, I’ve been known to use Pilsbury pizza crust when we are making homemade pizza. It is just so easy. But now that I have discovered this no-knead dough, I really have no excuse to use the store-bought stuff anymore. It is (almost) just as easy, and it tastes so much better. The one thing you do need is time – the dough is simple but it has to sit for 2.5 hours. So if you don’t have 2.5 extra hours, then you can make this pizza with Pilsbury, I won’t judge 🙂

But if you do have time, then I think you will love this dough! First, you mix together some flour, yeast, salt, sugar, and water and let it sit for 2 hours. The picture of the dough in the bowl above is what your dough will look like after 2 hours. Then you divide it in two and form dough balls. Those need to rise for 30 minutes and then you are ready to make your pizza!

You can top this dough however you like, so go wild! The dough makes two pizzas so when we made this BBQ Chicken Pizza, we also made one with tomato sauce, cheese, and sausage! I love pizza nights, and this No-Knead dough makes them so simple.

This BBQ Chicken Pizza is so delicious! No-Knead pizza dough is simple to make and the results are amazing! You will never order pizza delivery again!

Ingredients

    For the Dough
  • 3 3/4 cups (500 grams) bread flour
  • 2 1/4 teaspoons (1 packet) instant yeast
  • 3/4 teaspoon table salt
  • 1 teaspoon sugar
  • 1 1/3 cups water, room temperature
  • extra virgin olive oil, for the pans
  • For the Pizza
  • BBQ Sauce (about 1/3 cup for each pizza)
  • Cheese, shredded (about 1 cup. I used pepper jack and cheddar)
  • Rotisserie Chicken (about 1/2 cup, shredded and tossed in a little bbq sauce)
  • Red onion, sliced (about 1/4 cup)
  • Fresh cilantro, chopped (About 1/4 cup)

Instructions

    For the Dough
  1. Whisk together the flour, yeast, salt, and sugar in a medium bowl. Add the water and mix, using a rubber spatula or your hand, until dough forms. It is a dry dough, not overly sticky. Add a little water if it is too dry to come together.
  2. Cover the bowl with plastic wrap and let it sit at room temperature for about 2 house, until dough has more than doubled in volume.
  3. Lightly flour a work surface (I like to use a silicone mat). Using a rubber spatula or bowl scraper, remove dough from the bowl onto the floured surface. Gently form dough into a rough ball. Divide the ball in two and place the haves 4 inches apart. Cover each half with a piece of plastic wrap sprayed with nonstick cooking spray. Allow to rise for 30 minutes.
  4. For the Pizza
  5. Preheat oven to 500 degrees F
  6. Oil two cookie sheets or half-sheet pans
  7. pick up one mound of dough and place it floured side up on the pan. Gently stretch the dough, using your fingertips and palms) to almost fill the entire pan. You can make the pizza in a rectangle or a circle. If you get a hole in the dough, pinch it together with your fingertips.
  8. Spread BBQ sauce evenly over the dough - make sure it doesn't pool in the center. Top with cheese, then chicken, then onions.
  9. Bake for 15 - 18 minutes, until the edges are golden brown and the cheese is melted and bubbling. Remove from oven and allow to cool for a few minutes. Sprinkle with cilantro, cut into slices, and serve.
