Pineapple Upside-Down Cake

June 5, 2015 by Cate 17 Comments

A delicious and classic recipe for Pineapple Upside-Down Cake, made with fresh pineapple. This caramelized fruit is a perfect complement to moist yellow cake.

With all the baking that I do, you would think that I have tried every classic recipe at least one time. Nope. Not even close. There are just SO many amazing recipes out there. My to-bake list is never-ending. However I am trying to knock out some of the most classic recipes, and Pineapple Upside-Down Cake is on that list! I know it isn’t that popular anymore, but it is such a well-known old fashioned recipe that I just had to try my hand at making one. Plus, I’m not sure how this happened, but I had never actually eaten a piece of pineapple upside-down cake until I made this one! Verdict: I am a fan!

Texas Chocolate Sheet Cake

May 28, 2015 by Cate 13 Comments

A classic recipe for Texas Chocolate Sheet Cake. This cake is a family favorite for my husband and I can see why – it is so decadent and delicious!
Texas Chocolate Sheet Cake | ChezCateyLou.com

I’m sharing a very special recipe with you today for a very special day…it is TheBetterHalf’s 30th Birthday! He’s finally as old as I am, at least for the next 6 months. He was complaining the other day about getting old. I told him he would get no sympathy from me! Welcome to 30 – it isn’t so bad!

I love celebrating birthdays on the blog – it is nice to have an excuse to make a decadent birthday treat (not that I need an excuse to bake…). Growing up, Texas Chocolate Sheet Cake was one of TheBetterHalf’s favorite desserts, so I got the recipe from his mom to make for his birthday. I was nervous to bake a family favorite, because I didn’t want to mess it up! Luckily, he said this chocolate sheet cake was just as good as he remembered it.

Cake Batter Puppy Chow

May 20, 2015 by Cate 12 Comments

Classic Puppy Chow gets an upgrade with the flavor of cake batter and tons of sprinkles! This Cake Batter Puppy Chow is sweet, crunchy and totally addicting!

Cake Batter Puppy Chow | ChezCateyLou.com

Puppy Chow, aka Muddy Buddies…have you heard of it? I remember the first time I tried it, back in high school. I thought the name was SO weird – but the taste was far from weird! The classic version is made with peanut butter and chocolate mixed into chex cereal and topped with powdered sugar, and everyone in my school was obsessed with it. Little bags of puppy chow were the first thing to disappear from the bake sale tables! We had a lot of bake sales in high school. I can only imagine how excited everyone would have been if someone brought in this Cake Batter Puppy Chow!

The recipe comes from my friend Lynn at Fresh April Flours! Today I am helping her celebrate the release of her cookbook! She wrote a cookbook of over 20 puppy chow recipes, and this is one of the featured recipes.

Mini Hot Dog Cupcakes

May 18, 2015 by Cate 14 Comments

Yellow cupcakes with chocolate icing are decorated with a hot dog on top! These mini hot dog cupcakes will be perfect for your Memorial Day BBQ!
Mini Hot Dog Cupcakes - yellow cupcakes are topped with chocolate frosting and then decorated with a hot dog! | ChezCateyLou.com

I am SO excited to post these Mini Hot Dog Cupcakes today. I have had these in the queue for almost a month but wanted to wait until close to Memorial Day to share them with you. How perfect would these be for a Memorial Day BBQ?

I made these for a friend’s birthday celebration. One of her favorite foods is hot dogs! And rather than have hot dogs, which don’t quite scream HAPPY BIRTHDAY, I decided to make her hot dog cupcakes! Now let me be clear…these are NOT hot dog flavored. That would just be strange and gross, right?   Instead, they are delicious yellow cake cupcakes with chocolate icing, and the hot dog decoration is made from icing and Nilla wafers!  No meat flavor at all.

Churro Donut Holes with Dulce de Leche Filling

May 1, 2015 by Cate 21 Comments

Churro Donut Holes are stuffed with creamy Dulce de Leche filling. These cinnamon treats are the perfect breakfast or dessert to make for Cinco de Mayo!

Churro Donut Holes with Dulce de Leche Filling | ChezCateyLou.com

Anytime I see Churros on a menu or pass a churro store, I get overly excited and yell “CHURROS!”. It is a totally weird behavior, but I can’t help myself. I love churros and I also love the word! My churro obsession is kind of strange though because I actually don’t eat churros very often, and had never even tried them until I moved to NYC! I still remember my first real churro – it was from the Doughnut Plant! They don’t make churros anymore, which is a shame, because it was memorably good.

In honor of Cinco de Mayo, I wanted to make a breakfast based off of churros – Churro Donut Holes, and just to make them even more outrageous I stuffed them with Dulce de Leche!  All in the name of Cinco de Mayo – what a great holiday.
