Mango Coconut Donuts

A browned butter donut is topped with fresh mango glaze and toasted coconut! These tropical Mango Coconut Donuts will make you feel like you are on vacation!

We are throwing a party today! It is a BABY SHOWER for my good friend Zainab aka Blahnik Baker. Zainab was one of my first blog friends, and she is absolutely amazing. In addition to being an incredible baker, she is such a great person – so supportive, kind and fun! She is going to be the most amazing mom, and I’m so happy to be celebrating her today!

She is a coconut fanatic (see here and here) so we are throwing a tropical themed party for her. I’m bringing Mango Coconut Donuts to the party!  Donuts are kind of my thing, so I knew I had to make some coconut donuts for this coconut themed baby shower!

There is just something about the combo of mango and coconut – these tropical flavors are so delicious together! And they make one awesome donut topping. The donut itself is a standard baked vanilla donut, but I decided to use browned butter to add some extra flavor. Browned butter is one of my favorite flavors (and smells). It is so nutty and rich and amazing!

The real magic in this mango coconut donut though is in the glaze and the topping. The glaze is made from pureed fresh mango, powdered sugar, and… browned butter. Oh yes. I had some extra browned butter from the donut, so I threw it in the glaze!  The butter adds a great flavor to the glaze and helps with the texture – this is a true glaze rather than a frosting. Then I topped it all with toasted coconut!  The result is a tropical breakfast treat that will transform your breakfast table into a vacation destination!

Mango Coconut Donuts

Mango Coconut Donuts

A browned butter donut is topped with fresh mango glaze and toasted coconut! These tropical Mango Coconut Donuts will make you feel like you are on vacation!

Ingredients

    For the Donut
  • 3 Tablespoons butter (will use 2 in the donut and 1 in the glaze)
  • 1 cup flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup sugar
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup Greek yogurt
  • 1 teaspoon vanilla
  • For the Glaze
  • 1/3 cup mango puree
  • 1 - 1 1/2 cups powdered sugar
  • dash of salt
  • For the Topping
  • 1/2 cup coconut, toasted

Instructions

    For the Donut
  1. Preheat oven to 325 degrees. Grease two 6-cavity donut pans.
  2. Brown the butter: Add the butter to a small skillet over medium heat. Melt the butter, then swirl the pan continuously until the butter is browned and smells nutty. Watch the butter closely so that it doesn't burn. When browned, remove from heat and immediately pour into a small bowl - you will use 2 tablespoons for the donut, and the rest for the glaze.
  3. In a small bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a medium bowl, whisk together the sugar, egg, and 2 tablespoons of the browned butter. Add the milk, yogurt, and vanilla and whisk until well combined. Add the dry ingredients to the wet and mix until just combined.
  5. Spoon the batter into the donut pan, filling each cavity half full.
  6. Bake for 8-10 minutes, until the donuts are light golden brown. Remove from oven and cool in the pan for a few minutes, then turn out onto a wire rack to cool completely.
  7. For the Glaze
  8. Add 1/4 cup mango puree, 1 cup sifted powdered sugar, the rest of the browned butter, and a dash of salt to a small bowl and whisk until well combined and lump free. Add more puree or powdered sugar until desired consistency and flavor is reached.
  9. Dip the top of each cooled donut in the glaze. Sprinkle each donut with toasted coconut.

    Mango + coconut = best combo ever! (!!!) Cate, these look soooo delish. Who needs a vacation when you can take a bite of these babies and be instantly whisked away to the tropics?     Girl you totally nailed these donuts! The glaze looks incredible and so does all that gorgeous toasty coconut. I was going to do Mango Coconut too but then I saw you were doing these so I made a last minute change. So glad I did because your recipe would have blown mine out of the water!     I tried my doughnut pan for the first time the other day, and the doughnuts were okay. However, these look amazing! I love the idea of mango-coconut, and it gives me another excuse to break out the doughnut pan.
