I have the perfect summer Monday recipe for you – Simple Summer Bruschetta. When I say simple, I am not kidding. This recipe is so easy, it is barely a recipe! And that is just what my Mondays call for. After a long day of work, the last thing I want to do on Monday nights is spend hours cooking. And while TheBetterHalf might not think bruschetta is dinner, for me it is the perfect light meal!

I love a good bruschetta.  It is such a simple but classic appetizer that is delicious and also visually gorgeous!  And now is the perfect time of year to make this dish, when the tomatoes are at their peak.

A good bruschetta starts out with a great loaf of bread. I used a loaf of my No-Knead Bread. If you haven’t tried this recipe yet, you really should – it is life-changing! The first time I made it, I was absolutely amazed at how easy it was to make such an incredible loaf of bread. But if you don’t have the time or energy to make your own bread, any good loaf of rustic bread will work. You could even make this with a baguette, and make smaller pieces.

So when I said earlier that this is barely a recipe, I really meant it. The instructions and ingredients amounts are just guidelines.

I brushed my bread with olive oil and toasted it in a skillet – but you could broil your bread, grill it, or toast it in the oven. Anything to just get it nice and crispy.

And the amount of tomatoes, basil, and even oil are all adjustable to your tastes. If you can’t get enough tomatoes, cut more! If you want a little extra richness, drizzle extra olive oil on top of the finished bruschetta. If you are a vinegar fan, drizzle the top with a little balsamic. You really can’t go wrong on this one. As long as the tomatoes are good, your bruscehtta is going to be amazing!

Simple Summer Bruschetta

Simple Summer Bruschetta

Simple Summer Bruschetta is the perfect way to highlight the delicious flavor of summer tomatoes. It is so easy to prepare but looks beautiful and elegant. Plus it tastes amazing!

Ingredients

  • 2 - 3 tomatoes, diced (or 1 cup cherry tomatoes, diced)
  • 1/4 cup fresh basil, sliced
  • Salt and Pepper
  • 1/2 loaf of rustic bread, cut into thick slices
  • 1/4 cup olive oil, plus extra for drizzling
  • 1 garlic clove, cut in half
  • Balsamic Vinegar, if desired

Instructions

  1. Toss tomatoes with basil, salt, and pepper. Set aside
  2. Preheat a griddle or large frying pan over medium high heat.
  3. Brush both sides of the bread with olive oil. Place in the pan and toast on each side until light golden brown. Rub one side of the toasted bread with the garlic clove, and sprinkle bread with a little salt.
  4. Spoon tomato mixture onto toast slices. If desired, drizzle with olive oil and balsamic vinegar.

    I love the simplicity in this dish! Sometimes is simple is best. Especially with delicious tomatoes in season. I love making bruschetta with cherry tomatoes! They are much sweeter, and less watery. So good!
