St. Patrick’s Day is right around the corner! Are you ready with your Guinness / Bailey’s / Jameson / Corned Beef / Cabbage recipes? Ok maybe not all of those things together, that might be gross.  If you are still deciding what to make, I have a great Guinness recipe for you…Double Chocolate Guinness Cookies! This is my first cookie recipe using beer, and I am a big fan. Guinness cookies are definitely going to be making an appearance more regularly in my kitchen, especially around St. Patty’s Day!

A Mexican beer cocktail that is full of lime juice and spices. A Michelada is a refreshing and addicting way to enjoy a beer!

I love beer. It’s just the best. And there’s no better time to be a beer fan than right now. There’s over 3000(!) breweries in America – up from a only 89 in the late 1970s and 1000 in 1995. And this is a good thing. I bet your local grocery store carries 10 different varieties of IPAs (except you Pennsylvania, you’re still the worst), your corner bar probably sells craft beers from across town and imports from across the globe, and even your hometown baseball team’s stadium likely has over 100 different beer options (which, in fairness, makes sense – have you ever tried to watch a baseball game sober?) Gone are the days when Budweiser, Bud Light, and Coors Light were the only game in town.

Despite the shift from mass produced lagers to more flavorful local beers, one mega brand has been able to maintain (and even grow) its status as a summer-time favorite, and that’s Corona. Corona, as well as other Mexican imports (Pacifico, Sol, Dos Equis, Modelo Especial), just seem to hit the spot on sunny, summer days. And sure, beer snobs may not hold Corona in very high regard (ahem, BeerAdvocate), but I don’t care. As much as I love a great IPA, there’s something about squeezing a lime into an ice cold bottle of Mexican lager.

But what if there was a way to appease both the beer snobs and those just looking for easy-drinking refreshment? A way to elevate a relatively pedestrian beer and keep all of its refreshing characteristics? I think this is why the Michelada was invented.

Uncle Boons – NYC

Uncle Boons has some of the best Thai food in all of New York City – everything is incredible and so flavorful. It is one of our all time favorite restaurants!

I have a lot of favorite restaurants in New York.  I usually qualify those statements to some degree; Sfoglia is my favorite neighborhood restaurant, Gramercy Tavern is my favorite restaurant to spend an afternoon, Mission Chinese is my favorite restaurant that inexplicably was shut down by the health department, and so on. But if I had to eat one meal in New York City right now, I’d go to Uncle Boons. So I guess that makes Uncle Boons my favorite favorite restaurant (at least for the time being).  So what is it about this Thai restaurant that makes it so special?…

Pretzel Sandwich Buns

It seems like pretzel buns are everywhere these days, and I love it!  Even Wendy’s has embraced the pretzel bun…not sure that I will be sampling that anytime soon.  But whenever I see a sandwich on pretzel bread at a real restaurant I get really excited.  So I decided that I needed to make some at home!  Great decision.  These pretzel buns were so good!!  Crusty and salty on the outside, chewy and doughy on the inside – a perfect roll for any sandwich, or even to eat plain.  We made jalapeno burgers to put on our pretzel buns.  Burgers and pumpkin beer to watch the first Notre Dame football game of the season – perfection!  …

Irish Brown Bread (with Guinness!)

This no knead Irish Brown Bread has the most amazing flavor thanks to Guinness and buttermilk. A delicious brown bread that is perfect for St. Patrick’s Day!

The Better Half and I are Irish through and through. We both have Irish mothers (his Duffy, mine Murphy) and we both went to Notre Dame.  So we get a little excited when St. Patrick’s day rolls around!

I wanted to bake something festive, but I draw the line at putting green food coloring in my beautiful bread. It just seems too artificial. So I thought this recipe for Irish Brown Bread from my no-knead cookbook
would be the perfect festive recipe to try out. It is a play on Irish Soda bread, but it uses yeast for the rising, rather than using baking soda. And, it has Guinness in it.  Can’t get much more Irish than that!
