Kale pesto, made with fresh mint and toasted walnuts, and ricotta are the perfect topping for crostini – it makes a quick, easy, and delicious appetizer!

Now that spring is here and there is actually daylight after work, we love spending time on the rooftop of our building. There is something so relaxing about looking out over the hustle and bustle of the city, but being so far above it. And of course a nice glass of wine helps with the relaxation and enjoyment! Nothing beats enjoying a crisp glass of white wine on a warm evening looking out over NYC, especially when that wine is a Spanish one from Ribera y Rueda.

Having a delicious appetizer to enjoy with the wine is a necessity. I love easy appetizer recipes that taste amazing and look pretty – to me that is the best way to entertain! These Crostini topped with Kale Pesto and Ricotta fit the bill – they are delicious and are so simple to prepare.

I am starting the week off with an amazing appetizer that is perfect for Thanksgiving. Butternut Squash Crostini with Ricotta, Cider Caramelized Onions, and Fried Sage. That is a mouthful of a title, so I shortened it to Butternut Squash Crostini. But I almost didn’t because I didn’t want to short-change any of the ingredients in this recipe – they all work so well together and are integral to the delicious and addictive flavor of this crostini. It is a gorgeous appetizer that will be the star of any Thanksgiving appetizer spread!

Sunday morning = pancake time. Growing up, my dad made us a big breakfast almost every Sunday.  It was the best. Well, it still is the best because he still cooks breakfast any time I am home in St. Louis. Tons of bacon. Fresh squeezed orange juice. Fried eggs if you want them (cooked in bacon fat and served on rye toast. that is worthy of its own blog post). And of course, my favorite, pancakes.

I still crave pancakes pretty much every weekend. And while I will always love good old fashioned plain pancakes, I love trying out new varieties. Like these lemon ricotta pancakes.

This past weekend I was in my hometown of St. Louis. Apparently they skipped spring in the Lou and went straight to summer – it was so hot! Summer always makes me think of lemon desserts. The bright citrusy flavor and the yellow color reminds me of long sunny summer days.  So I decided to make these lemon ricotta cookies to celebrate the season. These cookies are like mini cakes!  They are light, fluffy, and moist. The lemon flavor in the actual cookie is subtle and when paired with the lemon glaze the flavor really pops.
