Classic Granola

My go-to recipe for classic granola is full of nuts and coconut, and has a little less sugar than typical granola – making it the perfect healthy breakfast!

I don’t know about you, but I definitely get in breakfast routines. I will eat the same thing every weekday morning for weeks or even months at a time. The past few weeks it has been a mini bagel with cream cheese and fresh berries, but for pretty much all of June and July it was exactly what is pictured here – fresh fruit (preferably a ripe peach with some berries) with Greek yogurt and my classic granola. I go through this breakfast phase pretty much every summer – the second it starts to get warm, I just crave a granola parfait. And I love making it with homemade granola – I think it is so much better than store bought!

Ricotta Tomato Toast is a simple but delicious appetizer that is absolutely perfect for summer entertaining!

One of my favorite parts of traveling is the inspiration that it gives me in the kitchen once I’m back home. I love recreating dishes that we tried on our trips, or putting my own unique spin on things. Our recent trip to Italy inspired this delicious Ricotta Tomato Toast. We had an amazing bruschetta in Portofino and I couldn’t wait to make my own version. A tomato toast is the perfect summer party appetizer. I think summer appetizers should be easy to prepare – but still beautiful and delicious. This ricotta tomato toast checks all the boxes. And it pairs perfectly with a wine from The Seeker – because you can’t have summer entertaining without a nice glass of wine!

Peanut Butter Brownie Ice Cream Sandwiches & a Giveaway

Peanut butter ice cream is sandwiched between gooey brownies to make these Brownie Ice Cream sandwiches – they are a decadent and delicious summer treat!

What’s your favorite ice cream flavor? I have a hard time choosing one – you should see me in an ice cream shop. I sample as many as they will let me, and then still can’t make up my mind! But chocolate peanut butter anything is at the top of the list, and it is TheBetterHalf’s absolute favorite, so that is what I usually end up getting. And I have never had a better peanut butter chocolate ice cream flavor than the Double Peanut Butter Chip from McConnell’s. I take my ice cream very seriously so you can trust me when I say it is the absolute best. Then, when you sandwich it between brownies, and add some mini peanut butter cups to the mix, well the result is one of the best summer treats ever – Peanut Butter Brownie Ice Cream Sandwiches.

The flavors of passionfruit, lime and ginger are mixed together to create this Ginger Golden Margarita! It is easy and delicious, a perfect summer cocktail!

What is it about summer that makes cocktails taste so much better? On a hot and humid summer evening, nothing hits the spot like an ice cold beverage. One of our favorite things to do lately is make a fun drink and bring it up to the rooftop of our building. Sipping a refreshing cocktail with a view of the city is what summer in NYC is all about! Our drink of choice the past few weeks has been this Ginger Golden Margarita. The bright color and tropical flavor make it the perfect refreshing summer cocktail.
