Did everyone have a nice labor day weekend? TheBetterHalf and I were in St. Louis visiting my family. In fact as you read this, we are on our way to the airport to head back to NYC. The weekends always fly by way too fast!
Tomorrow morning is going to be rough – not only is the long weekend over, but summer is over. I am definitely going to need something good for breakfast to cheer me up, and Double Chocolate Muffins will be just the thing. Light and fluffy chocolate muffins full of chocolate chips – who wouldn’t smile if that was on their breakfast plate?! Β And the fact that they are actually light and healthy is just icing on the cake!
I know chocolate might not typically seem like a breakfast food, but around my house, it definitely is. The more chocolate, the better! Any time I make muffins, TheBetterHalf says that I didn’t put enough chocolate chips in them. Chocolate lover.
My grandfather always loved a little chocolate in the morning, and I definitely took after him!
So even though these look rich and decadent, they are actually lightened up! I used yogurt, applesauce, and almond milk in here to keep them moist and fluffy but skinnier. Because even though I love eating chocolate for breakfast, I know that not every morning can start out with a chocolate frosted donut or a chocolate croissant. But you won’t even miss the fat and calories in these chocolate muffins – they still taste super rich and decadent.
I hope everyone enjoys their day off! Bake up a batch of these muffins if you have a few extra minutes today. They are so quick to make, and you will be much happier tomorrow morning if you have one of these on your breakfast plate!
These double chocolate muffins are a chocolate lovers dream breakfast. And you can feel good about starting the day with chocolate because these are actually light!
Ingredients
- 1 cup all purpose flour
- 1/2 cup whole wheat pastry flour (or use all-purpose)
- 1/2 cup cocoa powder
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1/4 cup vegetable oil
- 2 tablespoons unsweetened applesauce
- 1/2 cup yogurt (I used fat-free)
- 1/2 cup almond milk (or any kind of milk)
- 1 cup chocolate chips
Instructions
- Preheat oven to 400 degrees F. Line a 12-count muffin tin with paper liners, or spray with nonstick cooking spray.
- In a medium bowl, whisk together flours, cocoa powder, baking powder, and salt.
- In a sperate blow, whisk together brown sugar, eggs, oil, and applesauce until well combined. Add in yogurt and milk and whisk until well combined.
- Pour the wet mixture into the dry mixture, and stir until just combined. Fold in the chocolate chip.
- Pour the muffin batter evenly into the prepared tin.
- Bake for 15 - 18 minutes.
- Let muffins cool in the pan for 3 minutes, then remove to a wire rack to cool completely.
