Lemon and Mascarpone Gnocchi with Rosemary Brown Butter

These soft and pillowy lemon and mascarpone gnocchi are tossed in a rosemary brown butter sauce. The flavor and texture are out of this world!

I am slightly obsessed with the Food Network and have been for years. Specifically with Ina Garten and Giada de Laurentiis. I think I have seen every single episode of both of their shows. I just love the food they make, and they also both have pretty awesome lives. I have spent many a Saturday morning living vicariously through their shows. So when Ina had Giada as a guest on her show, I pretty much freaked! I was so excited. I still have it saved on my TiVo – TheBetterHalf keeps trying to delete it but I won’t let him! And ever since the show aired (ages ago!) I have been thinking about these Lemon Mascarpone Gnocchi that they made together. I finally got around to making them, and they definitely lived up to expectations!

Happy Friday everybody! Is anything better than Friday? I really don’t think so! Sure you still have to wake up and go to work or school – but the promise of the weekend is ahead. It is such a great feeling! And what better way to celebrate Friday than with cookies – carrot cake cookies to be exact. How’s that for some alliteration?!

These aren’t just any carrot cake cookies – these are for the Mystery Dish challenge! That’s right, it is already time for another Mystery Dish challenge. In case you missed some of my other posts, Mystery Dish is a fun group that I’m part of with some of my blogging friends. Every month, the host sends out a list of ingredients, and we have to come up with something using the “mystery” ingredients. It is kind of like the show Chopped, with a lot less pressure!

So how are those New Year’s resolutions going? Are we done with them yet? I mean, we’re almost three weeks into January – I think that’s enough. Or at the very least, can we take a break? Yes? Glad we’re on the same page. Because I need some cookies. I haven’t made any allllll year. That’s way too long. So without further ado, I present the first cookie for 2014 – pretzel chocolate chip cookies! Yep, they are as good as they sound.
