Skinny Double Chocolate Muffins

July 16, 2013 by Cate 15 Comments

I am so excited to post this recipe today. Why you ask?  Because this delicious, decadent chocolate muffin is made with no fat! No oil, no butter – nothing!  And they taste delicious.  Don’t get me wrong, I’m a fan of fat in baked goods…butter makes everything better!  But when I saw this recipe on Sally’s Baking Addiction , I knew that I had to give it a shot. I love baking with yogurt, like my chocolate zucchini bread or lemon blueberry yogurt loaf, but I usually add in a little oil or butter to keep things rich and moist.  This recipe, on the other hand, uses only nonfat yogurt and applesauce (there is a bit of fat from the 1 egg and the chocolate chips), and the results are amazing! The muffins are so moist.  They are light and fluffy, and so chocolatey tasting.  Even TheBetterHalf liked them, which means they really must be good.  I will eat anything that has chocolate in it, but he is a bit more discerning.  The only problem with these is that they aren’t so skinny when you eat three… …

Sorry for the lack of posts this past week. TheBetterHalf and I were on vacation in Italy!  If you follow me on Instagram, you can see some pictures from the trip. I can’t wait to share more details from the trip with you, so stay tuned.  In the meantime, I have a delicious breakfast recipe for you – Raspberry Cream Cheese Muffins. I had a block of cream cheese to use up before we left , so I decided to make this recipe from the Magnolia Bakery Cookbook. The book calls them breakfast buns, but they are really more like a muffin so I changed the name! My mom bought this cookbook for me after our first trip to the bakery 8 years ago!  …

Whole Wheat Sandwich Bread

June 21, 2013 by Cate 16 Comments

A great recipe for classic Whole Wheat Sandwich Bread. This is a light and fluffy wheat bread that is still sturdy enough for a sandwich!

I love no-knead bread and quick easy bread, but when I have time on a weekend, I really enjoy making good old fashioned bread.  The kind that requires kneading, takes up lots of time, and causes a mess.  But that’s what weekends are for, right?  It had been awhile since I had baked bread, so last weekend I decided to make Whole Wheat Sandwich Bread.  I have made this recipe before, so I knew it would be a winner, and that TheBetterHalf would like it, even though it has whole wheat in there (he is a white bread kind of guy). …

Pumpkin Yogurt Bread

June 11, 2013 by Cate 28 Comments

Greek yogurt keeps this Pumpkin Yogurt Bread super moist but still low in fat and calories. This light and skinny pumpkin bread is a healthy way to get your pumpkin fix!

Pumpkin Yogurt Bread - skinny, healthy, and delicious! | ChezCateyLou.com

I have gotten into the (bad) habit of going to Starbucks before work almost every morning.  And almost every morning while I wait in line, I stare into that pastry case.  It is so hard to resist their delicious baked goods.  The fact that NYC posts the calories next to each food item does aid in my self control a little bit (how does a raspberry scone have 480 calories?!), but sometimes I just can’t help myself.  When I give in to the temptation, I almost always pick the pumpkin loaf.  I am obsessed with pumpkin, and the Starbucks loaf is so moist and full of flavor.  However at 390 calories a slice, I am pretty sure there is a lot of oil contributing to that texture!  So I decided to make my own pumpkin bread, using yogurt to keep it moist and lower in calories and fat.  (I love baking with yogurt, like here and here) The results were amazing!  It had great pumpkin flavor, highlighted by the cinnamon and pumpkin pie spice. The yogurt gave the bread a great texture, and underbaking the bread just slightly also helped to keep it very moist.  This pumpkin yogurt bread  was just as good as Starbucks, and I didn’t feel guilty about eating more than one slice!  …

Funfetti Sugar Cookies

June 6, 2013 by Cate 26 Comments

Sugar cookie dough is loaded with sprinkles – these Funfetti Sugar Cookies are so fun and they taste delicious. They literally melt in your mouth!

Funfetti Sugar Cookies | ChezCateyLou.com

I’m headed to San Francisco for a long weekend, so today is my Friday!   I figured why not celebrate with some sprinkles.  What’s more fun and festive than sprinkles?  I really can’t think of anything. These funfetti sugar cookies are so fun and colorful!  They were really easy to make, and the results were amazing!  They are so soft – underbaking them is the key to keeping them very fluffy and tender.  And the flavor is great – sweet and buttery, without being greasy.  These are a perfect simple sugar cookie, and the colorful sprinkles in the dough (with some extra added on top!) make the cookie look as good as it tastes.  I will definitely be making these funfetti sugar cookies again around Christmas, with red and green sprinkles!  Hope you all have a great weekend!…
