Well, it is time.  I tried to wait, but I just couldn’t.  It is futile to try to resist it.  And what is “it” you ask?  PUMPKIN!!!  I’m actually kind of mad at myself…I try not to bake with pumpkin until it is fall, and just because the calendar says September and school has started does not mean it is fall yet – there are still 12 more days of summer left!! And with the temperatures in NYC right now, it feels like early August!  But I just couldn’t help myself.  Pumpkin has overtaken the blogging world, and after looking at pumpkin recipe after pumpkin recipe, I just HAD to make something for myself.  After all, pumpkin is one of my absolute favorite things to bake with – I devoted a whole week to pumpkin deliciousness last year!  So, for my first recipe of the season I bring you Pumpkin Cheesecake Bars with a Golden Oreo Crust – a pretty great way to kick off pumpkin season!

I can’t even begin to tell you how many of my recipes are a result of trying to use up an ingredient in my fridge. I HATE wasting food, but I’m constantly buying something for a recipe and then only using part of it.

Ex: milk. I will buy milk to make muffins, and then I have an entire carton to use up! (TheBetterHalf and I both hate to drink milk).

So this recipe came about because I had exactly 5 oz of cream cheese to use up! And I conveniently had 3 king size packs of Reese’s peanut butter cups (I can’t resist things that are on sale). And thus, Peanut Butter Cup Cheesecake Bars were born!

What are your thoughts on baking with cake mix? I don’t use boxed cake mixes all that often, but sometimes I like to take a little help from the grocery store! Plus, there is something about the flavor of boxed cake mix that is just so delicious.

Ever since Cheesecake Day the other day, I’ve had cheesecake on the brain. And I also had a container of ricotta to use up, so I decided to try something very different from anything I’ve ever made – Vanilla Bean Ricotta Cheesecake Cake.

I love baking with vanilla beans! The little seeds add the most incredible flavor to baked goods. Plus the bean specks are so pretty.
