What’s your favorite ice cream flavor? I have a hard time choosing one – you should see me in an ice cream shop. I sample as many as they will let me, and then still can’t make up my mind! But chocolate peanut butter anything is at the top of the list, and it is TheBetterHalf’s absolute favorite, so that is what I usually end up getting. And I have never had a better peanut butter chocolate ice cream flavor than the Double Peanut Butter Chip from McConnell’s. I take my ice cream very seriously so you can trust me when I say it is the absolute best. Then, when you sandwich it between brownies, and add some mini peanut butter cups to the mix, well the result is one of the best summer treats ever – Peanut Butter Brownie Ice Cream Sandwiches.

These cookies. They are really going to be the end of me. I have been trying to eat healthy since we got back from our trip. Because as much as I want to believe that gelato three times a day is normal, I know it isn’t. But then I made these cookies, and I can’t stop eating them. Do other people eat three cookies in one sitting?? Let’s go with yes, because these Pistachio Dark Chocolate Chunk Cookies are just too good to only have one. We are back from our trip! We had the most amazing time – I shared a ton of photos on Instagram. I hope it wasn’t too many…I just couldn’t resist posting all of the gorgeous views and delicious meals! And I can’t wait to tell you more – a Portofino post will be coming soon. But first, let’s have cake.

Thanks to jetlag, I was up super early on Saturday morning and the first thing I wanted to do was bake! I missed the kitchen! I get so much inspiration when I travel, and want to recreate everything that I ate. We saw lots of olive oil cakes and lots of cornmeal in the breads and pastries in Italy, so that is what inspired me to make a Cornmeal Olive Oil Blueberry Cake!

With all the baking that I do, you would think that I have tried every classic recipe at least one time. Nope. Not even close. There are just SO many amazing recipes out there. My to-bake list is never-ending. However I am trying to knock out some of the most classic recipes, and Pineapple Upside-Down Cake is on that list! I know it isn’t that popular anymore, but it is such a well-known old fashioned recipe that I just had to try my hand at making one. Plus, I’m not sure how this happened, but I had never actually eaten a piece of pineapple upside-down cake until I made this one! Verdict: I am a fan!

Anytime I see Churros on a menu or pass a churro store, I get overly excited and yell “CHURROS!”. It is a totally weird behavior, but I can’t help myself. I love churros and I also love the word! My churro obsession is kind of strange though because I actually don’t eat churros very often, and had never even tried them until I moved to NYC! I still remember my first real churro – it was from the Doughnut Plant! They don’t make churros anymore, which is a shame, because it was memorably good.

In honor of Cinco de Mayo, I wanted to make a breakfast based off of churros – Churro Donut Holes, and just to make them even more outrageous I stuffed them with Dulce de Leche!  All in the name of Cinco de Mayo – what a great holiday.
