Good morning! Apparently it is National Pancake Day. I’m not sure how I missed that one – TheBetterHalf just emailed me to let me know! As the pancake queen, I’m kind of upset with myself for not knowing about this awesome holiday. I might have to eat a plate of these for dinner to make myself feel better. Or these. Or these.

So I don’t have pancakes to share with you today, but at least I have the next best thing – cookies! I am on a roll with the St. Patrick’s Day recipes. I just can’t help myself – I will take any excuse I can to make fun and festive treats. I posted these Irish Cream Cheesecake Brownies the other day, and today I have St. Patrick’s Day funfetti chocolate chip cookies for you!

One of my favorite light meals is veggies and hummus. They are healthy, filling, delicious, and quick! I love to put together a beautiful platter of fresh vegetables with a big bowl of hummus in the middle.  It comes together so quickly but the finished product looks like you really put a lot of work into it.  I love that!

I must admit that usually I buy hummus – but every time I make it I ask myself why I don’t do that more often because it is SO easy and So delicious!  Plus you can flavor it any way you want.  This recipe is for avocado hummus – if you like guacamole, you are going to love this dip!…

I’m headed to San Francisco for a long weekend, so today is my Friday!   I figured why not celebrate with some sprinkles.  What’s more fun and festive than sprinkles?  I really can’t think of anything. These funfetti sugar cookies are so fun and colorful!  They were really easy to make, and the results were amazing!  They are so soft – underbaking them is the key to keeping them very fluffy and tender.  And the flavor is great – sweet and buttery, without being greasy.  These are a perfect simple sugar cookie, and the colorful sprinkles in the dough (with some extra added on top!) make the cookie look as good as it tastes.  I will definitely be making these funfetti sugar cookies again around Christmas, with red and green sprinkles!  Hope you all have a great weekend!…

It’s finally Friday! I don’t know about you, but I could use a cocktail (or two)! This refreshing pineapple mint tequila mojito will do the trick! This cocktail is delicious. The light sweetness from the mint simple syrup and the fresh pineapple complements the tequila and lime perfectly. Top it off with club soda for some bubbly action and you have a perfect cocktail! The original recipe calls for rum, but TheBetterHalf and I prefer tequila mojito. I think this would also be great with vodka. I decided to put a sugared lime rim on our cocktails because it looks so pretty – and because I am a fan of sugar if you couldn’t tell. It is so easy, just zest one or two of your limes and mix it with some sugar. Cheers! Hope you all have a great weekend.  …
