Brown rice is cooked with onions, tomatoes, garlic, and jalapenos making this Mexican Rice so flavorful and delicious! A great side dish for Cinco de Mayo!

Happy Friday! And it is an especially happy Friday because it is Cinco de Mayo and Derby weekend. Aka lot of delicious food and great drinks. I wanted to post something for Cinco de Mayo, and visions of churros and fish tacos and magaritas were dancing through my head. And those ideas are still floating around to make this weekend, but I really wanted to go back to basics, Cinco de Mayo style, and make some Mexican Brown Rice.

Ok I know, it sounds kind of boring. But sometimes simple food is the best food. Like this Mexican rice – it is nothing fancy, just some brown rice with tomatoes, onions, and jalapenos (and a few other goodies!), but it is so good! Plus it is the perfect side dish to make for your Cinco de Mayo feasts.

Bright and fresh asparagus and cherry tomatoes are mixed with healthy and hearty quinoa and then tossed in a simple lemon basil vinaigrette. A perfect springtime salad!

Is anyone else really into springy recipes lately? The weather is warmer and all the trees are in bloom here in NYC – it is so gorgeous! And it has me in the mood to cook lighter, healthier foods. Ok well except for these. But Saturday morning calories don’t count, right? Especially if you work out first!

But in general, I’ve been making lots of spring salads and other dishes to showcase all the great produce of the season. Did you all have a nice Easter weekend? TheBetterHalf and I were in St. Louis for a quick trip to see my family and we had the most gorgeous weather – it almost felt like summer! Which means that it must be smoothie season! I love making smoothies year round, but once it starts to get warm out, I can’t get enough of them. Smoothies are so easy to make- this mango smoothie only has four ingredients! Plus it tastes delicious and is healthy too.

Brown Butter Easter Blondies

These soft and chewy blondies have the most amazing flavor thanks to brown butter. They are full of candy coated chocolate eggs, making them the perfect treat for Easter!

I almost didn’t post these Easter blondies. I really don’t love the pictures, so figured that I shouldn’t put them up. And then I started thinking about the blondies. And how delicious they were. And how the two of us finished the whole pan in about two days. And I realized it would be a shame if I didn’t give you the recipe! Plus – they use my absolute favorite Easter candy, and I have to tell you all about that. So here they are – Brown Butter Easter Blondies.
