Today I am so excited to be hosting a virtual baby shower for my friend Meg at With Salt and Wit. She is having a sweet baby boy, and some other blogger friends and I wanted to give them some love!! Scroll down to the end of the post to see what everyone made for the shower!
Every party needs cupcakes, and since we made the shower Fall themed, I thought pumpkin cupcakes would be the perfect thing to make! And really – I also look for any excuse I can find to make cream cheese frosting. I could eat this stuff by the spoonful!
I love being a part of virtual showers for my blog friends! I think one of my favorite parts of blogging is all the amazing people that I have met. Megan is so talented, always creating delicious recipes (I mean look at these!) and taking beautiful photos of them. And she is so funny – I love reading her posts! These Pumpkin Cupcakes are definitely a new fall favorite. The cake itself is light and moist, with just the right amount of pumpkin and spice flavors. And, as I mentioned before, that cream cheese frosting is to die for. I’m not a huge icing fan – except when it comes to cream cheese icing. There is just something about the smooth texture and rich delicious flavor that gets me every time! Plus it pairs perfectly with the pumpkin cupcake. Pumpkin Cupcakes with Cream Cheese Frosting are the perfect dessert for fall! The icing is to die for!
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon pumpkin pie spice
- 2 large eggs
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 3/4 cup pumpkin puree
- 1 teaspoon vanilla
- 1 (8oz) package cream cheese, at room temp
- 6 Tablespoons butter, at room temp
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla
- dash of salt
- 1-3 Tablespoons milk or cream, if needed
Instructions
- Preheat oven to 350 degrees F. Line a 12-count muffin tin with cupcake paper liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.
- In a large bowl, whisk together the eggs with the white sugar and brown sugar until well combined and smooth. Add the oil, pumpkin, and vanilla and whisk until very well combined.
- Add the dry ingredients to the wet and stir until just incorporated. Fill each cupcake liner evenly. Bake for 15-18 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Allow the cupcakes to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
- Beat the cream cheese until smooth. Add the butter and beat until the two are well combined and smooth. Sift the powdered sugar so there are no lumps and add it to the butter/cream cheese mixture along with the vanilla and salt. Beat the mixture until everything is well combined and smooth. If the texture is too thick, add a small amount of milk or cream.
- Frost the cupcakes and serve.

I’ve got to say, I’m totally in cream cheese frosting camp with you, Cate! I usually scrape most of my frosting off, except when it comes to cream cheese! I’d almost rather eat that than the cake!

I am a frosting girl. Always have been, always will be. And cream cheese frosting is my definite favourite, especially when it is lovingly ladled on top of a moist and perfectly spiced pumpkin cupcake. It’s not even autumn here but I’m ready for all the pumpkin goodness!
