The Asiago and Cheddar Cheese Crisps and the Sea Salt Sun Crunch crackers are the absolute perfect accompaniment to my Sundried Tomato Hummus. This hummus is so easy to whip up. You just blend together some ingredients that you likely already have on hand – chickpeas, sundried tomato, lemon juice, olive oil, salt, pepper, and red pepper flakes. To keep the hummus even lighter, I add in a little chicken broth – it helps to smooth out the hummus without adding extra oil. I can definitely use a healthier option this time of year, because we all know I can’t resist the cookies!

Sundried Tomato Hummus

Sundried Tomato Hummus

Sundried Tomato Hummus is so easy to whip up and tastes delicious! Perfect for a quick and tasty snack or for a last minute party appetizer!

Ingredients

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1/3 cup sundried tomatoes (the kind packed in oil)
  • juice of one lemon
  • 1-2 tablespoons olive oil
  • 1-2 tablespoons chicken broth
  • 1/4 teaspoon crushed red pepper
  • salt and pepper to taste
  • fresh basil, for topping

Instructions

  1. Add the chickpeas, tomatoes, lemon juice, 1 T olive oil, 1 T chicken broth, red pepper, salt, and pepper to a food processor. Blend until smooth, adding more olive oil and/or chicken broth as needed, until desired consistency is reached. Taste and adjust salt and pepper to your liking.
  2. Transfer to a bowl and serve with fresh vegetables and NatureBox snacks for dipping.
